I have been playing with my food, well, my Monday Meal Plan actually……only two days into the week and already I am swapping meals and days around….I LOVE to break the rules!  Tonight’s meal was pasta, on the plan that is, but I fancied pizza, so pizza it was, and I have to tell you that it was DELICIOUS……and so easy – a pizza made with ready-made and ready to cook pizza bases and then it was just a matter of piling on the toppings and baking for ten minutes…….as well as using some of my Capricorn Challenge ingredients, from my Capricorn Hamper. Ethel will be proud of me I think, as my pizza had SEVERAL of the ingredients that were sent to me in it……tomatoes, red onion, pizza base, fresh thyme, olive oil and the GOAT’S CHEESE of course. I then threw on some spicy chorizo sausage slices, as well as some green chillies from a jar  that has been languishing at the back of the fridge for a while.

From start to finish it only took me fifteen minutes to assemble and bake…..and then all I had to do was rustle up a nice big salad and we were away. Obviously, this pizza could have any number of toppings on it, but I used my Capricorn ingredients as well as a bit of chorizo sausage that was lurking on the fridge, and the afore-mentioned green chillies…..so, at last the fridge is looking less crowded! The pizza base was NOT as good as my home-made pizza, but, it is handy to have these ready-made bases in the store cupboard, mainly for those days when time is at a premium in the kitchen…..as mine was tonight. I thought the pizza I made was rather good-looking too……in a pizza-ish kind of way!

This makes a very quick and easy supper dish for midweek, and you can adapt the ingredients to suit who is at your dinner table…..with the chillies and chorizo being ditched if you have non-spicy diners. An easy to assemble pizza which is perfect for a midweek supper dish - omit the chillies if you are serving this to young children or to people who dislike spicy food. On the table in under 15 minutes and piled high with tasty ingredients. Alternative cheeses can be used in place of the goat's cheese, but it does go very well with the tomatoes and chorizo sausage.

Ingredients

  • 1 x 150g pizza base (I used Napolina Pizzeria Pizza Base)
  • 2 tablespoons tomato purée
  • 2 vine tomatoes (sliced thinly and then cut into half)
  • 4 green chillies (from a jar, cut into small pieces)
  • 1/2 red onion (peeled and finely sliced)
  • 50g chorizo sausage (skinned, and cut into rounds)
  • 60g Capricorn soft goat's cheese (cut into small pieces)
  • fresh thyme
  • salt and black pepper
  • olive oil

Note

Directions

Step 1 Remove Pizza Base from outer packaging & place on a lightly greased baking tray.
Step 2 Spread the tomato purée over the base and arrange the chillies, onions, tomatoes, chorizo and goat's cheese over the top. Add some freshly chopped fresh thyme leaves and season to taste with salt and pepper - then drizzle the olive oil over the whole pizza and topping.
Step 3 Place the pizza in preheated oven (220ºC, 425ºF) & bake for 10 minutes until crisp & golden. Remove pizza carefully from oven & ensure it is piping hot before serving with salad.

    Love a pizza and have one on my list for the end of the week. I agree about the base, much nicer to make your own, but the ready made ones are very handy.

  9. Wowee! That looks fabulous Karen! Our fav topping is pepperoni and black olive, but thus looks scrumptious. We use packet mix the make own pizza base, takes 5mins to make & I think it tastes great. Weirdly Tesco own is the best (you’d think they were identical, it’s just flour, eh! But Tesco one gives nough dough to fill our rectangular baker (pampered chef). Others fall short!

      Thanks Jo! I MUST look out for the Tesco packet mix…..that sounds like a great idea for busy evenings too….I REALLY like the idea of making a rectangular pizza too, easier to cut and somehow a little different! Thanks for the tip re. Tesco’s packet pizza mix! :-) Karen
