    I am not sure of the name but my mum makes it….she cooks pork chops in a pan then places them in an over dish and then in an oven with layers of onions and sliced potato. Takes a while to cook but the onions and potatoes go really soft and it is delicious!

      Sorry hit post button too early,,, I love to make recipe mum always made, layers of potato and onions, then mix egg and milk together,bit of salt and ground pepper pour over, cook in oven. It’s a really delicious meal in itself.

    Scrub some large potatoes, cut a couple of deep cuts in the skins…
    Sprinkle with ground sea salt and fresh ground black pepper…
    Bake in a hot over until crips on outside, but fluffy in middle…
    While the potatoes are baking… Grate some mature cheddar cheese, finely chop some onion (mix of red onion and white onion works well) and finely slice/chop a leek…

    When the potatoes are cooked… slice them in half horizontally…
    Scoop the potato out of the skins and put it in a large, warm bowl…
    Put the empty skins on a baking tray…
    Add a little bit of butter to the scooped out potato and add the chopped onion and leek… Mix well and then add the grated cheese…
    Put this mix back in to the potato skins and put them back in to the over for about 25mins, so the filling is cooked through and the top is light brown and crispy!
