National Chip Week - Chips, Frites, Pommes Frites and French Fries Recipes!

Today’s weekly meal plan is all about the humble potato and more specifically, the CHIP! Yes, as my regular readers will know, I am currently on a diet, the 5:2 diet where I fast for two days, insofar that I only eat 500 calories a day; but, I have actually managed to develop an oven chip recipe, that I will be sharing later on in this week, that is 5:2 diet fast day friendly, as well as a potato fritatta and also a one pan chicken casserole recipe. So, although today I am sharing my mum’s Crispy Squashed Chips recipe, I am also adding my fast day recipe ideas, which will follow in separate posts this week. I am supporting National Chip Week with the view to buying local potatoes as well as treating myself to some chips (and fish) from the local chippie too. Did you know that the first “chips” were pieces of bread which were replaced with potatoes during wheat shortages. The first “chippie”, a colloquial slang term for a Fish and Chip shop, was Lees’s in Mosley, Lancashire, and Malin’s in London’s East End – they both opened for trade during the 1860′s. And, did you know that during the Second World War, the minister of food wouldn’t ration fish and chips because they provided good, cheap nourishment. Call them what you like, chips, fries or French fries, I love them and I am happy to embrace chip week with gusto and healthy helping of salt and vinegar on the side! The first "chips" were pieces of bread, which were replaced with potatoes during wheat shortages. The first "chippies", a colloquial slang term for a Fish and Chip shop, were Lees's in Mosley, Lancashire, and Malin's in London's East End - opened for trade in the 1860s. During the Second World War, the minister of food wouldn't ration fish and chips because they provided good, cheap nourishment! It is traditional to serve chips piping hot with salt and malt vinegar.

Ingredients

  • 900g Old potatoes (such as: King Edward, Maris Piper, Rooster or Sante)
  • Vegetable Oil (for frying)
  • salt (to season)
  • Malt vinegar (to taste)

Note

The more you move the chips around the more crispy bits you get - it's not conventional  know, but we love crispy squashed chips!

Directions

Step 1 Peel the potatoes and cut into sticks about 1cm thick and 8cm long. Put the potatoes in cold water to remove some of the excess starch prior to frying, then drain and dry.
Step 2 Heat oil in a chip pan or deep frying pan and put all of the chips in. Fry until the chips are pale golden, moving them around during frying to get the squashed bits get all crispy. Remove them from the pan and drain on soft kitchen paper'
Step 3 Just before serving, re-heat the oil and fry all the chips until they are very crisp and golden then drain them, and serve immediately with battered fish (wrapped in newspaper if you like) adding salt and vinegar to taste. Or, make a chip butty!

    Mmmm you cannot beat home made chips! I NEVER buy oven or microwaveable chips -they are so dry and tasteless!

    I like chips with eggs, so I can dip them into the runny egg yolk. These past two years I’ve stopped frying them and I roast them in the oven. They are great and really you can’t tell if they are fried or roasted.

    Even though there are just two of us I still end up making two varieties of chips for meals. My partner always wants french fries, whilst I prefer spiced chunky chips. It always surprises me that the larger chips are quicker to cook.
