For those eagle eyed readers amongst you who follow my monthly Secret Recipe Club posts, you may be thinking that my reveal day recipe is a little earlier than usual…….that’s because I have changed groups and I am now in Group C! I was in Group D for two years and although I LOVED all of the members in the group and I made some lovely friends, I thought it was time to move on to another group and meet more new people! The really funny thing is that for my FIRST assignment, I was assigned somebody that I know very well, and I have to say that I was THRILLED to be given her blog as my secret assignment! Gloria from Canela Kitchen is a wonderful, warm and friendly person who has a special place in my heart, as she was one of the first BIG food bloggers to welcome me to the crazy world of food blogging and also leave comments on my blog posts! She is as generous with her time and comments on other’s blogs too, and I LOVE her electric mix of recipes that she has on her own site over at Canela Kitchen. So, it is with great pleasure that I unveil my FIRST group C’s reveal day recipe, courtesy of Gloria, Raspberry & Maple Granola Yoghurt Pots, which are based on her lovely recipe for Greek yogurt and berries crumble desserts.

I would have been happy to make Gloria’s recipe exactly as she posted it on her blog, but for the fact that I had just made a large batch of Maple, Almond, Pecan and Wild Blueberry Granola, which I thought would be excellent as a substitute for the crumble mix, and as for the berries, I had a LOAD of fresh raspberries that needed using from my garden. But, I tried to keep the essence of Gloria’s recipe, as it was such a great idea for a quick dessert, or in my case, a breakfast dish too! I WAS tempted with lots of other recipes too, and I even printed a couple of recipes to try soon – Seafood empanadas (from Chile)Home made pizza (ricotta,basil and mozarella cheese)Apple and Quinoa Flan and Chile pepper chicken -Ají de gallina (A peruvian recipe). But in the end it was the raspberry harvest that dictated what I made and I was very pleased to discover such and easy recipe to use with my raspberries! Do take a trip over to see Gloria and tell her I sent you, she may offer you a cup of coffee and one her delicious cakes! An easy and yet nutritious dessert or breakfast dish. Use any seasonal berries you have to hand and also any granola of your choice.

Ingredients

  • 4 to 6 tablespoons vanilla yoghurt (I used low-fat yoghurt)
  • zest of half a lemon
  • 4 to 6 tablespoons granola (I used home-made maple, almond and pecan granola with wild bueberries)
  • 50g to 75g fresh raspberries

Note

An easy and yet nutritious dessert or breakfast dish. Use any seasonal berries you have to hand and also any granola of your choice.

Directions

Step 1 Take two tumblers or bowls and spoon the granola in the bottom.
Step 2 Mix the yoghurt with the lemon zest and then spoon it all over the granola.
Step 3 Add the berries by scattering them over the yoghurt, leaving a few for the topping, then sprinkle a little bit more of the granola and then top with the excess berries.
Step 4 Delicious as a dessert or a breakfast dish.

    Karen, so glad to have you in Group C!!! Besides being a gardener I think we have some other commonalities, I lived in England for 4 years in a thatched cottage, followed on to Germany and just a couple of years ago went to South Africa. I am (mostly) an organic/natural/whole foods kinda gal. I made empanadas from Gloria’s blog and they were wonderful! The yogurt parfait looks delightful, I just love the pairing of crunchy and creamy with that fresh fruit taste.

      Thanks so much Rhonda! Yes, we do have a LOT in common, as we have lived in the same countries and are natural organic kinda gardening gals, as you mentioned! I LOVED your blog when I was over there earlier on and I look forward to getting to know you more! Karen :-)

    This weekend I am going to eat yogurt! I have a really bad stomach bug which is giving me loads of heartburn! Yogurt and ice-cream are the only things that seem to sooth it! Boohoo! hense why I am up at 12.45am!
