British Summer Fruits is on organisation that represents 90% of berry growers in the UK. It funds and runs the Seasonal Berries campaign celebrating strawberries, raspberries, blueberries and blackberries.
Last year, British growers produced more than 49,000 tonnes of strawberries and growers are hoping for an equally good season this year.
Strawberries are an iconic part of the British Summer and will always be linked to calendar events such as Wimbledon and this year’s exceptional events such as the Queens’ Diamond Jubilee and the Olympics.

English Scones With Mixed Summer Berries and Cream.

To celebrate all that is wonderful about British Puddings and British Berries, I am sharing some of my favourite recipes below…….puddings DON’T have to be steamed and heavy, they can be light and frivolous and FULL of British Berries, especially Strawberries.

Ingredients
- 250g (9ozs) fresh Raspberries
- 225g (8ozs) Tub of half-fat crème fraîche (or double cream that has been whipped)
- 150g (6ozs) whipping cream
- 50g (2oz) caster sugar
- Palmier biscuits or biscuits/cookies of your choice
- whole raspberries for decoration
Note
This Raspberry Cream recipe dates back to the 18th Century and is British ~ a sort of a fool type dessert which was originally made with fresh whole milk, literally straight from the pail, and then whipped with cream and sugar; it remains a firm favourite of mine and I served it over the weekend to my friends who came for dinner on Saturday. Berries and fruit were often added to milk and cream in order to make desserts ~ fool, whim wham, syllabub and flummery to name but just a few, and of course let’s not forget fruit trifle too.
Directions
Step 1 | Place the raspberries in a small bowl and sprinkle in some caster sugar (to taste), crushing the raspberries slightly, but not totally. |
Step 2 | In a separate bowl, whip the cream until it has soft peaks then fold in the crème fraîche (or whipped double cream) and some of the remaining sugar (again to taste). |
Step 3 | Lightly mix half of the crushed raspberries and sugar with the cream mixture until it is a pretty shade of pink; then pile half of the mixture into 4 glasses, then swirl through the remaining crushed raspberries and top with more raspberry cream mixture ~ chill until needed ~ then add a swirl of cream on top and scatter a few whole raspberries over the top; serve with biscuits or cookies of your choice. |

Ingredients
- 700g (1 lb 9ozs) assorted frozen summer berries and fruit, or assorted fresh fruits and berries, such as: blackberries, raspberries, blackcurrants, redcurrants, blueberries, bilberries, cherries and strawberries
- 1 – 4 tablespoon sugar, to taste
- 225g (8ozs) plain flour
- 110g (4ozs) unsalted butter, cut into small pieces
- 75g (3ozs) caster sugar
Note
This was a quick throw it together Sunday Lunch pudding idea – raid the freezer for all the nearly used bags of frozen summer fruits, such as cherries, raspberries, blackcurrants, redcurrants, bilberries (blueberries), blackberries and strawberries. Fling them all into an oven-proof dish; whizz up a shortbread crumble topping. Fresh fruit such as Summer Berries are also wonderful when used in this recipe. We like our fruits to be on the tart side – so pleased add sugar to taste. Serve the crumble with hot custard, cold custard, cream, ice cream, crème fraîche or whatever takes your fancy.
Directions
Step 1 | Pre-heat the oven to Gas mark 4, 350°F, 180°C. You will also need a shallow oven-proof baking dish with a diameter of 9 inches (23 cm), 11/2 inches (4 cm) deep. |
Step 2 | First, make the topping. All you do is place the sifted flour, butter and sugar in the processor and give it a whiz until it resembles crumbs. If you don’t have a processor, place the flour in a large mixing bowl, then add the butter and rub it into the flour lightly, using your fingertips. Then when it all looks crumbly, and the fat has been dispersed fairly evenly, add the sugar and combine that well with the rest of the ingredients. |
Step 3 | Now arrange the mixed fruit in the dish and sprinkle over the sugar to taste, then add the crumble mixture, spreading it out all over the fruit with a fork and pressing down firmly. Place the crumble on a high shelf in the oven and bake it for 30 to 40 minutes until the top is golden and crisp. Serve with chilled pouring cream, custard, whipped cream, crème fraîche or vanilla ice cream. |
English Summer Berry Jellies and Ice Cream
Old-Fashioned English Summer Berry Jelly and Ice Cream

Ingredients
- 6 sheets leaves gelatin
- 600 ml raspberry juice ( or red fruit juice of your choice) (unsweetened)
- 75g caster sugar
- 350g mixed berries ( preferably strawberries, raspberries, blackcurrants and redcurrants.)
- vanilla ice cream or cream (to serve)
Note
Little wibbly-wobbly ruby red jellies with mixed summer berries, so cooling and great with ice cream. There is nothing I love more than taking a basket to the end of my garden to pick an assortment of ripe summer berries when they are in season. The sense of satisfaction at picking your own fruit is wonderful. Although I have called these little jellies “English” summer berry jellies, these are British of course - it's just that the berries remind me of my English grandparent's gardens and picking the fruit when I was little…………...plus, the combination of berries is the same as a traditional English Summer Pudding recipe. I make these in little vintage metal moulds, they look so pretty served this way; you can of course make this recipe in a large mould, but DO allow extra time for the jelly to set.
Directions
Step 1 | Place the leaf gelatine in a shallow dish and pour over just enough raspberry juice to cover the surface. Leave to soften for 5 minutes. |
Step 2 | Heat the remaining raspberry juice and caster sugar in a saucepan until piping hot. Mix in the softened leaf gelatine and any juice, stirring until completely dissolved and then set aside to cool. |
Step 3 | Halve the strawberries and mix with the other berries and soft fruits, crushing them slightly. |
Step 4 | Rinse 6 small jelly moulds or one large jelly mould, but do not dry as a wet mould will make it easier to remove the jelly when set. |
Step 5 | Distribute the fruit around the mould/s. Pour over around 300ml of the jelly juice and place in the fridge for an hour. When slightly set, pour the remaining juice into the mould and return to the fridge. |
Step 6 | To turn out the jelly, dip the mould/s into a bowl of hot water and run a knife around the edge of the mould. Invert them onto the serving plate/s, give them a quick shake and the jelly should slide out easily. |
Step 7 | Serve the jellies with vanilla ice cream or cream. |

A bit different – not your bog standard pie or crumble, but Apple & Berry Cobbler. Hot out of the oven with large scoop of creamy Vanilla ice cream. Heaven.

There’s something very naughty about making berry compotes (I often do raspberries soaked in cherry brandy!) and then innocently having them with ice-cream (shh … don’t tell the children!)

Great question, Got three ‘puddings’ I love, one with ‘fruit’ (yes I know its a vegetable) would be rhubarb crumble. As for the other two favourite puddings, well its good old rice pudding and Yorkshire puddings.

Really Karen, what kind of question is that – I have about 30 favourite puddings!!! But given this is all about berries, I shall go with meringues with strawberries and cream – straight or as Eton Mess. But your raspberries and cream looks mighty fine AND I just love your way of topping cooked fruit with shortbread. Strawberry shortcake is good too as is summer pudding and gooseberry fool and ……..
