Meal Planning Monday and Busy Week Ahead!

Another week and another meal plan, and I am having a VERY flexible week this week as we have several dinner and lunch dates and some journeys to fit in too…..with thanks as always to Mrs M who hosts this fabulous idea of linking up on her blog with a meal plan for Monday. I am late posting my meal plan today, as I have already been treated to one meal that was not cooked at home – yes, we had a fabulous lunch of Fish and Chips on Scarborough today, and they were absolutely delicious….…fresh cod and chips in a crispy batter, with a pot of tea, bread and butter and even some mushy peas, you can’t beat it! So, here to kick of my week is my Meal Planning Monday Post……I hope that it may help you decide what you will cook this week too…….see you later, Karen
Meal Plan: week beginning 21st May
Monday 21st May:
Breakfast: A couple of Honey, Banana and Blueberry Breakfast Buns that were baked yesterday,
served with butter and bananas and extra honey on the side.

Lunch: Fish and Chips in Scarborough!
(I do have a lovely fish and chips recipe on my blog)

Tea: Salad Sandwiches with fresh fruit
Tuesday 22nd:
Breakfast: Glamorgan Sausages (Selsig Morgannwg)

Lunch: On the hoof! We are out until the late afternoon, so will grab something out.
Dinner: Mum’s Cheese & Potato Pie with Steamed Greens (recipe to follow)
Wednesday 23rd:
Brunch: La Piperade (Basque Eggs)
- La Piperade
Travelling most of the day, so a hearty brunch!
Dinner (Late): Meal out with friends! (NO cooking again)
Thursday 24th:
Breakfast: Breakfast at friends……
Lunch: On the road, with sandwiches…….maybe these would be good:
Three Cheese Spring Spread in bread buns

Dinner: Something simple – Mexican Chicken, Tomato and Chilli Wraps

Friday 25th:
Breakfast: Poor Knights of Windsor
Boozy Toast, Poor Knights of Windsor, Pain Perdu or French Toast
Lunch: Fish on Friday: Baked Cod with Butter Beans and Vine Tomatoes

Tea: Cheese on Toast with salad and home-made chutney
Weekend:
We are out for most of the weekend, but breakfasts will be simple toast and home-made jams
and maybe scrambled eggs on toast too. Other meals will be fresh fruit, salads and sandwiches!
Right I know exactly where I would like to be eating this week 🙂 Wow what a fab menu but also what a mouth watering blog too.
I don’t do many linky’s but it has been great as I get to find all these yummy blogs.

Fab menu! I’m terrible at meal planning so this is actually a good idea.. I have no idea what I’m going to have this week. Didn’t feel inspired when I did my weekly shop so ended up with lots of baking ingredients but not much proper food!!
I DON’T always stick to the meal plans, but they give me a base on which to plan with a busy week ahead! Thanks! 🙂

Thanks Rosa, I am not a meal planner either, but, I tried this planning lark a few weeks ago, and although I don’t always stick to it, it’s useful to refer to for recipe ideas, as I do plan around time restraints and what I have in the freezer and pantry….
Wow, that is a busy week. I don’t know how you’ll find the time to eat at all!
I know…..we have lots on this week and you may notice that lots of my recipes are simple, BUT, we also have meals being cooked for us too!
You are one busy !! but what a great line up of meals – they should keep you going!!
