The Family Meal Plan whilst I Live on £1 a Day!

Oven Baked Chicken and Aubergine (Egg Plant) Parmigiana
Well, here is the promised meal plan number two! There are two meal plans this week, one that I posted yesterday for my Live Below the Line where I am trying to live on £1 a day for five days…..and the plan that I have devised for the rest of the family, as my daughter is here for a week’s holiday and I don’t expect her or anyone else to live off £1 a day this week. The meal plan is going to be a little flexible, as we have a few days out planned, and I am trying to juggle lots of balls on the food front this week…..so, this will be the bare bones of a busy week’s eating! There will be lots of soups featured, as they fit in with my £1 a day plan and are perfect for the unseasonal weather we have been having lately…….I woke up to FROST and a frozen bird bath this morning! There will also lots of bread, as part of BOTH menu plans will be home-made bread for dunking in soups and making sandwiches. I am only posting a plan for the week days as the weekend plan is VERY fluid at present…..but, I will be sharing anything new and exciting with you I am sure, should they occur. I will also be back very soon with more photos of the amazing birthday tea we all had last Saturday…….so there’s lots on the agenda! I hope some of the recipe ideas will be inspirational enough for you to try them, bye for now, Karen.
Menu Plan for week beginning 7th May
Monday:
Breakfast: Boiled eggs and toast
Lunch: Sweet Corn Chowder with Oatmeal Bread

Dinner: Hot Beetroot and Potato Salad with Smoked Trout and Dill Cream

Tuesday:
Breakfast: Porridge
Lunch: Curried Carrot and Lentil Soup or leftovers of Sweet Corn Chowder with Oatmeal Bread

Scottish Curried Carrot and Lentil Soup
Dinner: Oven Baked Chicken and Aubergine (Egg Plant) Parmigiana (Recipe to follow)

Wednesday:
Breakfast: Marmite and Toast (Home-made Bread)

Marmite on Toast - a Veritable British Classic!
Lunch: Omelette with wild garlic and herbs
Dinner: Northumberland Pan Haggerty – Vegetarian Cheese and Potato Bake

Thursday:
Breakfast: Dropped Scones/Scotch Pancakes with Honey

Dropped Scones (Scotch Pancakes or Griddle Cakes)
Lunch: Salad with cheese and home-made bread
Dinner: Seafood Spaghetti Gratin (recipe to follow)

Shrimp and Spaghetti Gratin
Friday:
Breakfast: Fresh fruit and home-made bread with yoghurt
Lunch: Soup – probably carrot and tomato
Dinner: Fish on Friday – Fish Curry (recipe to follow)
