Jubilee Meal Planning Monday…..
Cakes, Sandwiches, Fish and Barbecues!
I am LOVING the Diamond Jubilee feeling…….there has been a palpable feeling of pride and patriotism and for me, an excuse to treat myself and some house guest to lovely food and drink, all in the name of the Jubilee! So, this week’s meal plan is JUST a little decadent and frivolous! Despite the weather I am planning a barbecue or two, and I am also baking and concocting lovely treats for the Jubilee tea time table. My meal plan is a LITTLE loose for some days…….and I may not stick to it, but I love the idea of a “framework” on which to plan my meals, and it does make it easier sometimes, although I often “rebel” against my own ideas and change the menu! So, here we go…….here’s my Jubilee Week Menu Plan, and with a BIG thanks to Mrs M who is kind enough to host this weekly blog challenge. Karen.
Jubilee Week Menu Plan
(4th June 2012)
Monday 4th June:
Jubilee BBQ with 12 guests! I am making some of the following recipes:
Smoked Salmon Tartine (Tartine au saumon fumé)
Marinated English Goat’s Cheese with Wild Garlic, Stem Ginger and Herbs
BBQ Salmon Parcels (Recipe to follow)
Along with salads and bangers, burgers and CHAMPERS!
Tuesday 5th June:
Jubilee Tea Party for friends! Cakes, bakes and scones, as well as sandwiches.
Red, White & Blue Strawberries and Cream Jubilee Cakes
Regal Pear and Chocolate Pavlova Crown
Assorted sandwiches:
Wednesday 6th June:
Lunch: Scrambled eggs on toast
Tea: Salad and home-made bread
Thursday 7th June:
Lunch: Salad – LOVING salad season! A Goat’s Cheese Salad
Tea: Grilled chicken and peppers with wraps and chilli sauce
Friday 8th June:
Lunch: Sandwiches – salad and cold chicken
Tea: Fish on Friday – Fish of some sorts, probably on the BBQ (Salmon or Cod)
Weekend 9th and 10th June:
Out and about! A moveable feast…….

My back yard is my neighborhood street party. we do best with about 8 guests at a time, but can fit 12 when needed. My wife has caught Jubilee fever and has our DVR set for a few of the specials. One of our history specialty channels did a retrospect of the Royal family during WWII and I was captivated. Nice to see her getting her well deserved honors.
