Best Fish for the BBQ: The best fish for barbecuing are those with oily flesh such as mackerel, sardines and herrings. Apart from the fact that the flesh does not often break up, there is also the delicious effect that smoke has on oily fish. Other fish that is perfect for the BBQ is meaty fish such as cod steaks, salmon steaks, tuna fish, monkfish, halibut, sea bass or sea bream and any other meaty white fish with skin on. Seafood such as scallops and prawns also make a tasty additions to the barbecue as they are great cooked on skewers over hot coals……I often make seafood kebabs with cherry tomatoes and peppers, and they are delectable! Another handy way to barbecue fish is to cook the fish in foil parcels, this way the fish is kept moist and any added marinade or vegetables cooks along with the fish without falling through the BBQ grill!

My favourite fish to cook is probably basa or river cobbler, they have lovely delicate flavours and are beautiful when seasoned and wrapped in foil parcels with butter and prawns and BBQ’d to perfection. I’m trying to get my Mum to eat more seafood while she tries to lose weight, hopefully we’ll get some warmer weather so we can use the barbeque!

I love sea bass, cooked in foil parcels with onions, smoked paprika and a little sweet chilli sauce.
My hubby does a fish kebab type thing. He marinades cod & haddock and uses peppers and potatoes on skewers, delicious
I love getting a whole salmon, stuffing it with slices of lemon & whatever fresh herbs I have to hand, drizzling with olive oil & seasoning before wrapping it in newspaper. Dampening the paper before throwing it on the BBQ, means it slightly smokes the fish. Delicious!

My family’s favourite is salmon, I marinate it overnight in the fridge with fresh lime juice and coriander. They love it barbequed.

I made king prawn skewers with pineapple, peppers and coated in chilli, paprika and lemon home made marinade last time we had a BBQ 🙂
Halibut and prawns are lovely on the BBQ and both have a non-flake-texture which is important to me 🙂

On the barbecue, I still miss Weskus (West Coast) Snoek (baracuda) – my favorite in South Africa. We would partly smoke it, using sawdust with the coals, and covering the fish while it is cooking. Soooo yummy with good oldfashioned wholegrain bread and apricot jam… Here in the UK, nothing beats fresh Scottish salmon!
Snoek is GREAT fresh but not so nice tinned….LOVE your cooking method too!
