Monday Meal Plan with Hello Fresh, BBQ’s,
Stone Fruits and Home-Made Bread
Hello again, it’s Monday and it’s SUNNY, and my meal plan this week is also going to be a sunny menu too, and with LOTS of help from Hello Fresh, but more about that later during the week when I feature the meal box I was sent and the meals I made from it…..last week’s Monday Meal Plan went very well, and the only changes I made, were changing meals from one day to another, although I never got to share some of the recipes on my blog, I will be sharing them this week……..hopefully, if I have time! The most successful recipe from last week, was undoubtedly my Genoise Sponge Cake with Berries and Chantilly Cream, which, I ended up making TWICE!

The next most popular meal was my Dorset Blue Vinny Ploughman’s Lunch, which was served with baguette the first time and then with a big chunk of home-made Cottage Loaf over the weekend, for a simple lunch in the garden……and it is bread making that I will doing this week too, I am experimenting with some new recipes, as well as fruit loaves. My Pie making didn’t go ahead, as I had a BBQ for friends on Sunday, so I will be pie making this week instead, but the BBQ was a huge success and we will enjoy the leftovers today! I am also making more preserves this week, as a friend has passed on some LOVELY wild plums, so there will be jam and chutney bubbling away some time this week too. But let’s get on with my plan, an easy one this week, with lots of BBQ’s planned as the weather is set to stay fair, apparently! Menu Plan for Week Beginning 23rd July 2012
Monday 23rd July:
Breakfast: Fresh fruit
Lunch: Leftovers from BBQ – Chicken, bacon and apricot skewers and cold sausages!
Served with left over couscous and roasted Mediterranean vegetables.
Dinner: Courgette & Butterbean Salad with Pan-Fried salmon
Tuesday 24th July:
Breakfast: Scotch Griddle Cakes with Heather Honey
Lunch: Frisée Salad with Artichoke Hearts, Membrillo, Manchego Cheese & Sun-Dried Tomatoes
(I have LOTS of bits and bobs in jars in the fridge!)
Dinner: Lean Mean Chicken Meatballs with Home-Made Tomato Ragu
Wednesday 25th July:
Brunch: Smoked Haddock Kedgeree for Brunch
Dinner: Fresh Summer Chicken with Ginger Rice and Courgettes
Thursday 26th July:
Breakfast: Toast with Lemon and Ginger Marmalade
Lunch: Sandwiches
Tea: Grilled Pork Chops with Hot Mango Chutney (recipe to follow)
Friday 27th July:
Breakfast: Greek Yoghurt and Poached Stone Fruits
Lunch: Fish on Friday – Soused Herrings (recipe to follow)
Tea: Out for dinner!
Weekend 28th/29th July:
Saturday: Village fete – so baking pies and cakes!
Sunday: Roast Chicken and Bread Making!
