I am not sure of the name but my mum makes it….she cooks pork chops in a pan then places them in an over dish and then in an oven with layers of onions and sliced potato. Takes a while to cook but the onions and potatoes go really soft and it is delicious!
Like the other person, if shepards pie is classed as a potato dish, then definitely that!

I do love simple rosemary roasted potatoes, though a favourite party snack in our household are my roasted potato skins, refilled with their own mash with mustard tarragon and bacon , topped with Double Gloucester cheese and grilled.
How can I possibly pick one favourite dish? I have soooo many favourites. Chips, garlic & rosemary cubed roast potatoes, mash with sausages & gravy, dauphinoise, potatoe rosti…….the list goes on & on & on….

Lancashire hot pot made with lamb chops and thyme with lamb stock and sliced potatoes on the top, then the liquid thickened to make gravy and served with a green veg.
Rissoles (not sure of the spelling sorry) – corned beef mashed with potatoes and onions then fried. Add tomato sauce and bread on the side 😀

My favourite potato dish is plain old chips, but only from the fish and chip shop with loads of salt and vinegar eaten out of paper (not those horrible polystyrene containers).

Cheese, onion and leek baked potatoes!
Scrub some large potatoes, cut a couple of deep cuts in the skins…
Sprinkle with ground sea salt and fresh ground black pepper…
Bake in a hot over until crips on outside, but fluffy in middle…
While the potatoes are baking… Grate some mature cheddar cheese, finely chop some onion (mix of red onion and white onion works well) and finely slice/chop a leek…
When the potatoes are cooked… slice them in half horizontally…
Scoop the potato out of the skins and put it in a large, warm bowl…
Put the empty skins on a baking tray…
Add a little bit of butter to the scooped out potato and add the chopped onion and leek… Mix well and then add the grated cheese…
Put this mix back in to the potato skins and put them back in to the over for about 25mins, so the filling is cooked through and the top is light brown and crispy!
Has to be home made chips with ham and eggs..
