CHIMICHURRI WITH SEAWEED
This is a traditional Chimichurri sauce with all the taste and unique properties of Galician seaweed. It is ideal for grilled meat, fish and seafood. Use it to dress potatoes, to accompany roasted or grilled vegetables, or simply with a nice tomato salad.

A real Spanish table isn’t complete without this famous garlicky mayonnaise. Originally from Catalonia, it is made with crushed garlic, salt and olive oil. Indeed, the name is in fact a construct of the Catalan ‘all i oli’ meaning ‘garlic and oil’. It is the perfect accompaniment to many things, including grilled meats as well as a variety of rice and seafood dishes. It also goes very well with Tortilla (Spanish Potato Omelette). We have chosen this version from la Chinata because the quality of their olive oil is some of the best in the country.

Ibérico Bellota Salchichón (Spanish Salami) from Jabugo de Ley. Located in la Sierra of Huelva in Andalucía, Jabugo is one of the most famous places in Spain for ibérico ham. It’s worth pointing out that there are varying degrees of quality when it comes to Jamón Ibérico. The best is Jamón Ibérico de Bellota which is from pigs that have been left to roam freely in the forests and have enjoyed a diet of ‘bellota’ or acorns. It is this diet that gives a lot of the flavour to the meat. Great to enjoy by itself as a tapa or as a special addition to your sandwiches, pizzas or empanadas.

La Chinata is a family business that began in 1932 to grow olives for oil production. After four generations they have not only acquired a thorough knowledge of olive oil and its uses, but have also developed a range of other gourmet artisan products as well as various olive oil based cosmetics. In this month’s hamper we have chosen their Flask DOP Reserve Sherry Vinegar made from Palomino grapes. Sherry vinegar was the first Spanish vinegar to receive DOP status and this reserve vinegar is particularly special as it is subjected to an ageing time of at least two years in oak barrels. Mahogany in colour, the vinegar acquires hints of oak from the barrels giving it a truly unique personality. With an intense flavour that is still both soft and delicious on the palate, this vinegar is rather like a good perfume: with only a few drops, it has the ability to transform any dish.

My Favourite spanish Dish,which was taught to me by Rosa Diaz My Spanish Granma is Potatas Bravas!I Still make it today twice a month and always think of her when I Do!I Still Have her huge tortoiseshell hair clip she used to wear!Sadly I Didnt inherit her thick lovely Locks!But Boy She taught me to cook GOOD peasant spanish Food!! Simple Tortilla, although it never tastes quite the same here as it does eaten at a taverna overlooking the Med.
Churro. A favourite snack of mine which is available for purchase in many of the street markets. Having a sweet tooth I love the plain sugar coated the best and have tried many other variations.

When I tried to explain being a vegetarian to an elderly, non-English-speaking relative of a Spanish friend, she kindly made me a tortilla with potatoes and walnuts. It was one of the nicest meals I’ve eaten, simple but delicious.
Not really got a favourite, but I do love Paella, reminds me of the first time I went to Spain.

Choritzo and chicken stew. Easy to cook and a warming comforting meal. Lived in Spain for a short while and really miss their delicatesan food.

I loved cabbage in a cheese sauce lol! It was cheap and easy to make when I was a student! I still love cabbage and cheese though rarely make it!

When we were in Nerja some years ago, a local restaurant did Fabada Asturiana. Mix of beans, pork, chorizo and morcilla. It was fantastic.
The hamper looks incredibly yummy, would love to try the chimichurri with seaweed!

My favourite is Spanish omlette because it’s a filling meal and is very healthy. I like the mix of flavours, especially pepper.

Tapas and Spanish Brandy! On our first Spanish holiday the after dinner coffee was served in the bar – therefore you had to pay! An elderly lady (rather like the Adli gin lady!) told us to have brandy as it was cheaper. We took her advice, it helped numb the sunburn too!
Paella. Terrific dinner, but I naturally pronounce it with the Welsh LL sound, which is not particularly Spanish I fear.

My favourite Spanish recipe is Jambon Croquettes. Perhaps with some Romesco sauce on the side.
Paella because the first time I had it was in Spain.
When we got home, my sister and I tried to make it, but it tasted nothing like the ones we had in Spain.
But, we had a lot of fun and laughs, cooking it for our family – who did a good job of pretending to enjoy it.

I love paella
I love potatas bravas and tortilla … and paella … in fact i love it all
I love a chorizo risotto. It’s bit of a mixture of spanish and italian, so if needs be, make it a paella!
Paella – it’s just such a great tasty dish to prepare. x
Tapas..i love all the flavours of the little dishes combined! Usually i go for Spanish omelette, seafood paella, garlic mushrooms, fish or kebabs and meatballs to share. with crusty bread and oils. 😀 delicious!

I’m vegetarian & can’t remember any Spanish dish to rave about. They tend to use meat in everything (mind you, I haven’t been for many years). Love Spain though, fantastic countryside.

I absolutely love Paella, I think it is the fact that it has seafood, chicken and rice which are some of my favourite foods all in the one dish. The traditional Spanish paella is by far the best.

I love paella style dishes – of course the classic recipes you see in this country normally have all sorts of things in – which can end up pricey! But the beauty of a paella is you can really make the dish with any bits and bobs you have to hand and it doesn’t have to be expensive, but it is very tasty – especially if you have chorizo at hand!
