My favourite midweek recipe is potato base pizza … it’s so quick, easy and cheap to make and tastes as good as ‘standard dough’ pizzas.
tonight we had red peppers stuffed with minced lamb , tomatoes, etc topped with cheese which melted all over. Added a baked potato too – it was brilliant. Can’t say any particular favourite – we have travelled a lot over the past 20 years and therefore our cuisine is varied. Our meals depend on what I have in the fridge, freezer or on special at the supermarket.
Can’t beat a roast dinner 🙂 what a tasty looking prize.

Pitta Panna. A Swedish meal of cubes of potato, onion, ham all fried in a pan and seasoned with spices. Once served on a plate you put a fried egg on top and burst the yolk so the yolk creates a sauce. You can add lots of vegetables and herbs to this to make it your own but traditional pitta panna is simple, but it tastes great!

Dutch sla met spekjes ( mash potato with lettuce, bacon, boiled egg, gravy and smoked sausage). I know sounds awfully but is delicious. My partner didn’t liked the idea ( he’s English ) but after trying it, it’s on the weekly menu

Just found a new favourite from the Levi Roots cookbook, a one pot recipe with chicken stuffed with red onion, ginger, spring onion, rosemary and garlic,casseroled with sweet potatoes, carrots (my addition) and potato. Seriously lush comfort food, this is going to be a winter favourite.

low fat carbonara – use Elmlea Light instead of cream and trim all the fat off smoked bacon, use just a tiny amount of dried Italian cheese, use a small amount of olive oil to fry up the mushrooms
Tray Bake chicken Thighs – can mix and match with veg such as peppers / greens / red onions / sweet potato chunks etc. add stock and herbs / garlic – easy ! Add chorizo chunks and bacon and black olives to make a Spanish Chicken xx
Spanish rice! Its great because you can use whatever you have in the house and its quick! We usually use lots of veg and chicken, chorizo and prawns! x
