A selection of Sides and Salads for #CookBlogShare Week 17. With the weather hotting up in the UK, I’m featuring Sides and Salads this week.

Welcome to CookBlogShare Week 17: Sides and Salads. Often relegated to the, well the side, or classed as just an accompaniment, I often think that sides and salads are the quiet and unassuming stars of the show.
In an ever popular healthier kick to eat more of our “five-a-day”, sides and salads are very important, and they don’t have to be boring, as today’s highlight hopefully shows.
I’ve highlighted four salads and sides in today’s round up of week 16, and I am sure they will be wonderful accompaniments for the coming BBQ and Picnic season in the UK, which I for one cannot wait to embrace.

CookBlogShare Week 17: Sides and Salads

This 20 minute Spicy Chickpea Buddha Bowl makes a perfect breakfast, lunch or dinner on those busy days when time is limited but you still want something delicious and nutritious. Packed full of flavour and easily adapted to suit what you happen to have in your fridge, it’ll become your go-to too!

Never quite sure how to cook rice? This recipe is for you. This easy Coconut Rice with Lime is a failsafe way to fluffy rice that’s never mushy or undercooked. Delicately flavoured with coconut milk and lime, this is a tried and tested side with cooking instructions for both the stovetop and a rice cooker.

Potato salad with summery broad beans, peas and a lovely light lemon and dill dressing. No mayo. An excellent BBQ side and SO delicious with grilled fish or chicken.

If you’ve never tried a samphire salad then you need to! This vibrant salad is salty from the samphire, juicy and sweet from the tomatoes and acidic from the balsamic vinegar. It’s a great combination of complementary flavours and delicious with summer fish or chicken dishes. It’s even great by itself!
