BBQ and Summer Sides – Cook Blog Share week 25. I’ve collated my favourite summer BBQ and Sides to help you plan your summer cook outs.

Hello and welcome to BBQ and Summer Sides – Cook Blog Share, week 25. A big thanks to Beth who hosted last week’s linky, and highlighted some fabulous Summer Desserts.
Today I am sharing some of my favourite recipes from Beth’s linky last week, with a definite BBQ and Summer Sides theme.
I know the weather has turned a bit rainy and is cooler, but we’ve still got July and August to look forward to, and I intend to be cooking on the BBQ as much I can.
I love a good barby, with lots of salads and dips, as well as homemade bread and bread rolls. So, I’ve shared four recipes that I saved last week, as well as some of my own recipes too.
BBQ and Summer Sides Recipes
Pineapple Coleslaw (or Pina Colada Coleslaw)
A tropical twist on an old favourite. All the usual cabbage and carrot coleslaw expectation with a pineapple and coconut Pina Colada twist. Perfect as a side and summer BBQ special! Gluten Free, Dairy Free, Vegan. This fabulous recipe is from Gluten Free Alchemist.

Lebanese Baba Ganoush – my husband’s favourite smoked aubergine dip, says Marita. The flavours of smoky aubergine combined with the creamy texture of tahini and yoghurt makes this dish so special. It requires minimal preparation but is big on taste. Recipe from My Dinner.

Fluffy Quinoa With Pesto
Transform plain quinoa into a flavour packed vegetarian side dish in one easy step. Find top tips on how to cook fluffy quinoa every time. The clue is in fluffy: no-one likes mushy, soapy or bitter. Just add pesto for a flavoursome twist on an already delicious and nutritious staple. This recipe is from Tin & Thyme.

Prosciutto, Burrata and Grilled Peach Salad
This Prosciutto, Burrata and Grilled Peach Salad is perfect for Summer parties. Sweet peaches and salty proscuitto pair perfectly with the creamy burrata. This recipe is by Sarah at Real Food with Sarah.

More BBQ and Summer Sides
A tasty, traditional American style macaroni salad from Pennsylvania Dutch Country, where the Amish people live and work; I remember having salads like this at every large gathering I attended when I lived in that area and I love the tangy, piquant sauce as well as all the vegetables that are added. Great with BBQ’s, Picnics or for Pot Luck Suppers!

My recipe for Greek Salad, adapted from A Day in the Life on a Farm, with all the essential elements that a traditional Greek salad has – Feta Cheese, Fresh Oregano, Cucumbers, Olives and Tomatoes with an Olive Oil and Lemon dressing.

Moroccan Chicken & Apricot Salad with Tabbouleh
Making the most of the summer months and cooking outside on the barbecue, this recipe for Moroccan Chicken & Apricot Kebab Salad with Tabbouleh is served with fresh herbs and tomatoes on a bed of peppery, crispy leaves. Feeds two as a main meal with pitta breads, or four as a light snack or starter. (why not use my recipe for tabbouleh here: “Arabian Nights” Tabbouleh Salad, omitting the extra chicken that is added)

Layered Picnic Salads in a Jar
Amazingly easy to make and such a fabulous idea for picnics, barbecues, travel snacks and lunch boxes. These layered salads keep fresh in the fridge overnight and there is no need for any extra salad dressing as they are “dressed” with spicy salsa and a sour cream topping. Serve with tortillla chips and for picnics and lunch box snacks, make sure there are lids that fit the jars.

Dining alfresco is such a treat and everything in your post looks so delicious. Hard to imagine at the moment. We’re on day five of cold and rain. I was desperate for rain for the garden as it’s been dry for so long. But careful what you wish for methinks.
