Easy Cooking for Busy Days in a Slow Cooker

I have made this recipe for Slow-Cooker Gammon with Ginger Beer three times now, as we all love it, especially my husband.
It is a fabulous recipe when time is short, as it cooks in the slow cooker, whilst you get on with other things.

I have several recipes for ham and gammon on Lavender & Lovage, as I love to experiment with new seasonings, herbs, spices and the cooking method too.
This latest recipe for Slow-Cooker Gammon with Ginger Beer is delicious, with a wonderfully aromatic flavour of ginger and warm spices.



The last time I cooked it, I used two smaller joints, and you can do that too, as I’ve given cooking instructions for up to 1.8 kilos of gammon in weight.
Once cooked, serve this spiced gammon joint hot, with pease pudding, boiled potatoes and parsley sauce, as well as spiced red cabbage and seasonal veggies

And of course, once cooked, it can be served in salads, soups, sandwiches, as part of a Ploughman’s Lunch, or as a hot meal again.
It also freezes well, just slice it and pop a sheet of greaseproof paper in between each slice before putting in a ziplock bag, so you can take individual slices out as you need them.

If you are on a diet, you can use low-calorie or sugar-free ginger beer, as I did last time I made this, as I have lost 3 stone over the last 18 months with Slimming World.
I hope you enjoy this as much as we all do. It’s such an easy recipe but the results are really delectable. Plus, it’s the joint of meat that just keeps on giving!

Cooking Notes
- Increase the cooking time if using a larger joint of ham or gammon.
- Store covered for up to 5 days in the fridge after cooking.
- It also freezes well, just slice it and pop a sheet of greaseproof paper in between each slice before putting in a ziplock bag, so you can take individual slices out as you need them.

Ingredients
- 1.8kg to 2kg gammon (ham) joint, unsmoked
- 1 x litre bottle ginger beer
- 1 x onion, peeled and cut into quarters
- 1 x carrot, peeled and cut into quarters
- 1 x celery stick, cut into quarters
- 6 x cloves
- 2 x whole star anise
- 2 x bay leaves
- 1 teaspoon mixed peppercorns
- Water to top up
Instructions
- Place the ham/gammon into the slow cooker, then add the ginger beer, vegetables, bay leaves and spices. Top up with water so the liquid just covers the ham/gammon.
- Cook on high for 5 to 6 hours or on low for 6 to 8 hours, or a combination of both, Some slow cookers have an Auto setting that switches to keep warm for the last few hours.
- Remove the ham/gammom and allow to cool for 10 minutes before carving and serving.
- If you aren't serving it straight away, allow the ham/gammon to cool in the spiced ginger beer liquor, this will keep it moist and infuse the meat with more ginger and spice flavours.
Notes

Cut the fat and skin off the gammon before serving.
