A decadent and dreamy dessert - this chocolate mousse has a generous slug of Baileys Chocolat Luxe in the mousse and then Baileys Original Irish Cream in the creamy whipped topping - served with a scattering of grated chocolate and crunchy toasted hazelnuts, this is dessert to delight all who are luckily enough to eat it!
Ingredients
Mousse
- 6 free range eggs
- 225g chocolate, minimum 75% cocoa solids
- 4 tablespoons (120mls) Baileys Chocolat Luxe
Baileys Cream
- 200mls whipping cream
- 2 tablespoons icing sugar
- 3 tablespoons (90mls) Baileys Original Irish Cream
Topping
- Grated chocolate
- 50g toasted hazelnuts, chopped

Directions
Step 1 | Make the Baileys cream topping first: Whisk the cream, icing sugar and the Baileys with a hand whisk until it holds gentle peaks – be careful not to over whisk it as it will split. Set to one side. |
Step 2 | Make the chocolate mousse: Break the chocolate into pieces and place in a bowl that sits over the top of hot but not boiling water. Heat the chocolate until melted. |
Step 3 | Separate the eggs, and then whisk the egg whites until they hold soft peaks. |
Step 4 | Mix the egg yolks into the melted chocolate and whisk in a quarter of the whisked egg whites, along with the Baileys liqueur. Gently fold in the rest of the egg whites, mix well, and then spoon the chocolate mousse into 6 glasses. Put the mousse in the fridge to set for at least two hours. |
Step 5 | To serve, spoon the Baileys cream on top of the mousse and sprinkle with the grated chocolate and toasted hazelnuts. |
