Delectable toasted sandwiches with more than a hint of Mexico......these toasties are made with Leerdammer toastie cheese, avocado, chorizo and red onion and are perfect as a supper or lunch dish when served with a fresh tomato salsa and salad.
Ingredients
- 4 slices thick bread (home-made is best but toast bread is also good)
- 4 slices Leerdammer toastie cheese
- 12 thin slices of chorizo sausage (skin removed)
- 1/2 red onion, peeled and thinly sliced
- 1/2 ripe avocado, mashed with a little lemon juice or sliced
- smoked paprika
- salt and pepper
- salad and baby tomatoes to serve

Directions
Step 1 | Turn on your toastie/sandwich making machine and set to 5 minutes if you have a timer. |
Step 2 | Lay two slices of bread on a bread board and layer the filling as posted in the ingredients list, giving the filling a good sprinkling of smoked paprika, salt and pepper. |
Step 3 | Place the remaining slices of bread on top of the filling and press down. |
Step 4 | Carefully lift the sandwiches and place them onto the hot plates in the sandwich machine, close the lid and cook for 5 minutes. |
Step 5 | Open the lid and using oven gloves as the sandwiches will be hot, take them out and place them on a plate. |
Step 6 | Allow to cool for a minute before cutting them into 4 pieces and serve them with a tomato and avocado salsa and salad. |
