The Secret Recipe Club, Comfy Cuisine and Vanishing Oatmeal Craisin Cookies

Vanishing Oatmeal Craisin Cookies
This is my first Secret Recipe Club assignment and I had an amazing blog assigned to me, Patti’s Comfy Cuisine, with lots of very tempting recipes to choose from, which, made it very difficult. After several hours of perusing through Patti’s recipes, I decided upon a classic cookie recipe, and one that I knew my husband would like too ~ as he loves oatmeal. I have made a version of these cookies before, and as I had a BIG bag of craisins (semi-dried cranberries) in my pantry these were the obvious choice to make. Patti found this recipe on a box of Quaker Oats; Patti says that she makes these so often that she doesn’t need to follow the recipe anymore.
Patti replaced the suggested raisins (from the original recipe) with dried cranberries and they certainly added a really nice sharpness to the sweetness of the biscuits…..I tweaked the recipe a little by adding a few walnuts to the mixture as I know my husband likes them, and our walnut tree gave us quite a few nuts this year, so we are keen to use them! The added crunch of the walnuts really married well with the oats and cranberries. Patti’s recipe was easy to follow and is a real keeper for us, I am always on the lookout for a good fruity and oaty biscuit recipe and this certainly fits the bill beautifully.
I made a full batch of these and they kept fresh for several days in an airtight tin; the recipe states that the yield is about 3 dozen cookies, I managed 32, but I probably made them a little too large! These would be an excellent cookie for an after~school snack with a glass of milk and the combination of the oats and cranberries was really very good. Here is Patti’s recipe ~ I have kept the ingredients in American cups format, which is easy to convert using one of the many on~line measurements converters.
Thanks Patti for such a lovely and homely recipe.
I will be back later, see you all then,
Karen.

Oatmeal Craisan Cookies

I make these cookies so much I don’t even need the recipe anymore.  My son craves them, my friends pay for them, need I say more?

I found this recipe under the lid of a container of Quaker Oats and they have been our favorite since day one.  I replaced the raisans with “craisans”, dried cranberries.

Vanishing Oatmeal Craisan Cookies

  • 1/2 lb. (2 sticks) butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1-1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 cups Quaker Oats (quick or old fashioned, uncooked)
  • 1 cup craisans

Preheat oven to 350 degrees F.  Beat together butter and sugars until creamy.  Add eggs and vanilla; beat well.  Add combined flour, baking soda, cinnamon and salt; mix well.  Stir in oats and craisans; mix well.  Drop by rounded tablespoonfuls onto ungreased cookie sheet.  Bake 10 to 12 minutes or until golden brown.  Cool 1 minute on cookie sheet; remove to wire rack.
About 3 dozen cookies.
