Harvester’s Cheese and Tomato Pie – This country recipe uses just five ingredients and makes a fabulous light lunch, snack or supper dish.

A Recipe from Ambridge, Borsetshire, Home to The Archers

Today is Lammas Day, also Yorkshire Day, it traditionally marks the start of harvest, and so what better than to share this Harvester’s Cheese and Tomato Pie recipe.
This simple recipe uses just five ingredients, and is so easy to make, but it makes a fabulous light lunch, snack or supper dish.

It’s made with stale bread, butter, cheese, suet and tomatoes, and that’s it. If you are vegetarian, than you can use vegetarian suet instead of beef suet.
The original recipe, which was in *The Archers Cookbook, suggests white bread; however I had made my Overnight Farmhouse Wholemeal Bread Loaf, and I had a couple of slices left that needed using.

The recipe says 6 slices of bread, but as I was using a large homemade loaf of bread, which I sliced thickly, I used 3 slices, and cut them in half.
I used a sharp, extra mature Cheddar cheese, and some rather glorious beefsteak tomatoes, which were just bursting with summer flavours.

My husband absolutely loved this recipe for Harvester’s Cheese and Tomato Pie, and he has asked for it several times again. He likened it to a baked cheese and tomato toastie.
Serve this with pickles, chutney,salad, cold meats and ham, or just by itself for a light snack. Use any stale bread you have to hand, granary and sourdough bread also works well.

One tip I will share, I found I used more butter than the 2 ounces (55g) suggested in the original recipe. I also used a little more cheese too.

Ingredients
- 6 slices stale white bread, or bread of your choice (I used 3 large slices of wholemeal bread cut in half)
- 1/2 pint (300ml) milk
- 4oz (115g) grated cheese (I used 5oz/140g)
- 2oz (55g) grated suet
- 1/2 lb (225g) large, ripe tomatoes (I used 2 large tomatoes)
- 2oz (55g) butter (I used 3oz/85g salted butter)
- Salt and white pepper, to taste
Instructions
- Grease a pie or baking dish, I used an enamel pie dish, and preheat the oven to 180C/350F/Gas mark 4.
- Soak the sliced bread in the milk.
- Layer the bread with the grated cheese and suet.
- Add a good thick layer of sliced tomatoes, dot with little knobs of butter, and season with salt and pepper as you go.
- Top with a layer of bread dotted with butter, I added a little more cheese on top too.
- Bake for 20 to 25 minutes, or until the bread is crisp, golden brown and the butter and cheese have melted.
- Serve hot.
