Loaded Festive Christmas Dinner Chips (Fries) A fabulous serving idea using leftover meat, stuffing and pigs-in-blankets from Christmas lunch

A Festive Poutine!

Nothing is wasted in our house, and we all love leftovers. Today’s recipe for Loaded Festive Christmas Dinner Chips (Fries) is a favourite, which uses Christmas dinner leftovers.
Using frozen oven chips (fries), with leftover roast turkey (or chicken, and ham) with pigs-in-blankets, stuffing, gravy and cranberry sauce, this is similar to Canadian poutine.

You can also use leftover roast potatoes too, but I usually use them along with the leftover vegetables to make bubble and squeak.
There’s usually gravy left over too, which is handy, But if you have used it all, then make some instant gravy, which is just as nice when poured over these loaded chips.

If you have time, then homemade chips are fabulous in this recipe. The meat is a moveable feast – I used roast chicken last time I made this, but ham, pork, turkey or beef all work.
Use any stuffing that’s left – I like to use my homemade bacon wrapped stuffing loaf, with the added bacon, that’s if it’s not been picked off in the kitchen!

I’ve suggested this recipe serves four people, however, you can adapt it for fewer people or a crowd – it all depends on what you have left.
It’s certainly a cheap and cheerful way of dressing up any leftovers, plus you can re-heat this in an air fryer for speed and ease.

Notes and Homemade Chips Recipe
- Re-heat any bread sauce that is left, and add before the gravy.
- You can use shop-bought and ready-made pigs-in-blankets, they must be cooked first though.
- For a veggie version, add cooked nut loaf, Quorn, or brie cheese, with vegetarian stuffing, and veggie gravy etc.
- Homemade Chips:
- 900g potatoes, peeledVegetable oil, for frying
- 1. Peel the potatoes and cut into wedge shaped chips about 2cm thick and 8cm long. Put the potatoes in cold water to remove some of the excess starch prior to frying, then drain and dry.
- 2. Heat oil in a chip pan or deep frying pan and place all of the chips in the oil. Fry until the chips are light golden brown, moving them around during frying to get them all evenly coloured and crispy. Remove them from the pan and drain on soft kitchen paper. Season to taste with salt.

Ingredients
- 200g frozen oven chips per person, or homemade chips
- Leftover meat, such as turkey, chicken, ham, gammon or beef
- Leftover pigs-in-blankets, or ready-made pigs-in-blankets
- Leftover stuffing
- Leftover gravy, or instant gravy made with gravy granules
- Cranberry sauce
Instructions
- Oven bake the chips according to the packet instructions. Most can be cooked in the air fryer too.
- Whilst the chips are cooking, shred the meat into small pieces, and break up the stuffing into bite-size pieces.
- Re-heat the gravy, it make some fresh with instant gravy granules.
- 5 minutes before the chips are cooked, add the pigs-in-blankets and stuffing to the chips - sit them on top of them.
- When the chips are ready, spoon them into serving dish, or into individual bowls, dividing the pigs-in-blankets, stuffing and meat between all of the dishes/bowls.
- Pour over the hot gravy and add cranberry sauce. Serve immediately.
