With an Easy Prep the Night Before Method

Continuing with my Cricket Tea posts, I am sharing my friend Sarah’s recipe for her Cricket Tea BLT Sandwiches.
These were the sandwiches that her son, who played cricket at Easton CC in Suffolk, regularly requested when she was on the cricket tea team.

I have shared ingredient amounts for one full round, i.e. two slices of bread; just increase the quantities as necessary. I suggest that you allow half a sandwich (2 x quarters) per person.
You can use white or wholemeal bread, but Sarah said that she usually used best-of-both, which is half white and half wholemeal flour, OR granary bread.

She also used to make these Cricket Tea BLT sandwiches with smoked streaky bacon, and not back bacon. I must say, that I do prefer streaky bacon in a butty or sarnie!
She would pre-cook the bacon, slice the tomatoes and dice the lettuce the night before, and then just assemble the sandwiches on the day of the match.

You can also get ahead on the morning of the match, and butter the bread, then cover them with a damp (and clean) tea cloth, so you just have to add the mayonnaise and filling when you arrive at the cricket pavilion.
I realise that these are very popular sandwiches, and you can buy them in most sandwich shops, bakeries and tea rooms etc. But, hopefully the recipe method I have shared below, will help when larger quantities are required for cricket teas, buffets, picnics, parties etc.

Once made, they stay fresh for up to 2 to 3 hours, but to help with any soggy bread, you can arrange lettuce on each half of the sliced bread, so the tomatoes are in the middle with the bacon.

Ingredients
- 3 rashers of smoked streaky bacon
- Half a tomato
- Iceberg lettuce
- 2 slices of bread
- Butter
- Mayonnaise
- Salt and pepper, to taste
Instructions
- Line a grill pan with tinfoil and arrnage the bacon on top; grill until cooked and crispy.
- Drain the bacon on paper towels to remove excess fat and grease.
- If cooking the night before, place the cooked bacon into an airtight container and store in the fridge.
- Slice the tomatoes the night before too, and store them in an airtight container.
- Wash the lettuce, place in a salad spinner to remove excess water, and shred it finely with a bread knife - this best done on the morning of the match, so the lettuce doesn't go brown on the cut edges.
- Butter the bread on both slices, add mayonnaise to both slices - just a smearing, about 1 heaped teaspoon per sandwich.
- Arrange the letttuce on one half, then add the sliced tomato, season to taste with salt and pepper.
- Place the cooked streaky bacon on top of the tomato, then add a little more lettuce.
- Then lay the other slice of buttered bread on top.
- Cut each round of sandwiches into triangles, as in four quarters.
- Cover with a damp tea cloth or cling-film until you need to serve them.
