Buttermilk and Chive Waffles with Smoked Turkey and Cheesy Poached Eggs - A delicious recipe for a casual and elegant weekend breakfast or brunch.
Ingredients
Waffles
- 150g plain flour
- 1 1/2 teaspoons baking powder
- 1 large free-range eggs
- 300ml buttermilk
- 75g melted butter
- 4 tablespoons finely chopped chives
- salt and pepper to taste
To serve
- smoked turkey ham (1 slice per person)
- poached eggs (1 per person)
- 25g grated Cheddar cheese (per each egg)
Garnish
- freshly chopped chives (to garnish)
Note
Buttermilk and Chive Waffles with Smoked Turkey and Cheesy Poached Eggs - A delicious recipe for a casual and elegant weekend breakfast or brunch.
Directions
Step 1 | Pre-heat your waffle maker according to the instructions. You can also pre-poach your eggs and then drop them in ice water until you need to serve them - you then just pop them back into hot water to reheat before serving. |
Step 2 | Mix all of the waffle ingredients together until JUST combined. Season to taste with salt and pepper. DO NOT OVER MIX! |
Step 3 | Pour or spoon the mixture into the waffle maker and then close the lid and cook for between 5 to 6 minutes until the waffles are cooked, light and fluffy. Keep the waffles warm in a warm oven whilst you prepare the other ingredients to serve. |
Step 4 | Just before serving the waffles, poach your eggs; to serve, allow one waffle per person, place a slice of smoked turkey ham on top of the waffles, then 3/4 of the grated cheese, sit the poached egg on top and scatter the remaining cheese over the poached egg with the chives. Serve immediately. |
Step 5 | (My waffle maker is a Sage Appliances No Mess Waffle Maker, and this recipe yields 2 large round waffles, making 8 waffles, as each waffle is split into 4 quarters, about 6 square waffles in a waffle iron or in a square waffle maker) |
