Serve with baked potato and seasonal vegetables. Ingredients 4 boneless and skinless chicken breast fillets 2 tablespoons olive oil 4 cloves garlic, peeled and finely chopped Zest and juice of 1 lemon, plus zest of 1 lemon to garnish 1 x 150g tub of herb and garlic cream cheese, such as Boursin or equivalent Salt and pepper to taste Note An easy pan-fried chicken dish made with chicken breasts, cream cheese, lemon, garlic and olive oil. Serve with baked potato and seasonal vegetables. Directions Step 1 Heat the olive oil in a large frying or sauté pan and brown the chicken breasts over a high heat on both sides. Remove the chicken and set aside. Step 2 Add the garlic, lemon zest and juice and cream cheese to the pan and cook until well amalgamated. Step 3 Put the chicken breasts back into the pan and simmer over a gentle heat, turning regularly, for between 15 to 20 minutes or until the chicken is cooked. Step 4 Serve the chicken and the sauce immediately with seasonal vegetables and a baked potato, or salad.
