Roast Butternut Squash Ravioli with Walnut Muscovado Butter Sauce by Elizabeth of Elizabeth’s Kitchen: Such a delectable dish of pasta, with roast butternut squash, fresh pasta and a walnut butter sauce. This hearty meal would grace any dinner party table.
Lentil, Mushroom & Cashew Bolognese by Catherine of Cate’s Cates: A truly amazing plate of pasta that is not only tasty but is packed full of healthy ingredients such as lentils, wine, cashews and sun-dried tomatoes; this “meaty” veggie dish is comfort food at it’s best.
Zucchini “Meatballs” and Tomato-Curry Sauce with Almond Parmesan (aka Vegan Indian Spaghetti and ‘Meatballs’) by Janet of Taste Space: How can courgettes look so good! But they do in this delectable vegan “meatball” recipe with a rich spiced sauce and almond Parmesan.
Nuts about Curried Pasta Salad by Helen of The Grumbling Tummy: Curry and pasta with nuts? Yes, really and Helen does it so well in this divine recipe for pasta! She adds mango chutney, cashews, celery and cucumber to her innovative dish for a crunchy treat too.
Red Pepper, Coriander and Almond Pesto Pasta by Shaheen of Allotment 2 Kitchen: Any recipe that jas red pepper and almond pesto in the title has my immediate attention, and this recipe by Shaheen looks simply stunning. Shaheen uses peppers from a jar to good use too, very handy.
Creamy Tortellini, Mushroom and Spinach Soup by Karen of Lavender and Lovage (Me!): A wonderful recipe that i discovered from another blog, and one that I will be making again; I added toasted walnuts for a nutty texture and loved the combination with the mushrooms and spinach.
Maccheroni al ferretto fatti in casa con la farina di noci by Sandra of Sonoiosandra: A truly wonderful Italian inspired recipe and with wonderful ingredients such as fresh pesto and prawns with plum tomatoes.
Thanks to Jac for entrusting me with her challenge, Karen

What a terrific roundup Karen. Thanks so much for being a host for me. A great theme too. Sorry I didn’t get an entry in. I didn’t do much cooking over in Cyprus this year.
