Making an Easy Enchilada Sauce in under a Minute!

Today’s recipe is for Easy Enchilada Sauce – and I’m chuffed to dried chillies with the recipe, as it delivers everything I am looking for in a spicy sauce – it’s easy, quick, tasty and fulfils my desire for Mexican fare! I know that you can buy enchilada sauce in the UK (and France), but it’s never the same as the sauces I used to enjoy when I lived in the States. If you search for enchilada sauce recipes on-line, you will be met with a barrage of recipes from very simple chilli and tomato sauces to the authentic “salsa rojo”.……it’s a bit of a minefield and I was loath to use my precious dried chillies (sent to me from a chum in New Mexico) in a recipe I might not like. What I was after was a complex sauce somewhere between the two, and one that had a bit of a kick.
Enter another friend in the States; in a food swap a few years ago she sent me a selection of dried chillies, all used now, but also some recipe cards for Mexican recipes using dried chillies. Amongst the recipes was one for Enchilada Sauce, and it seemed to tick all the boxes for what I was looking for in a sauce. The recipe uses flour in it, as well as oil and vinegar, and I think it’s these three ingredients that improves the sauce in my opinion. For those after a Gluten Free recipe, you can omit the wheat flour and add a gluten-free alternative. The sauce is vegetarian (and vegan), and has some lovely elements to it, such as the addition of several dried chilli peppers mixed with other herbs and spices. I was also lucky enough to have some dried Mexican oregano in my arsenal of herbs, which really makes a difference.
