It’s already the end of November and therefore it’s not too early at all to start thinking about Christmas. I’ve started to buy my Christmas bits and bobs already, such as Christmas crackers, biscuits for cheese, nuts, candles, sauces and also some ready-made party food. And, I’ve been planning my menu for the Big Day, along with some pre-Christmas gatherings we are hosting. I LOVE baking and cooking for Christmas, but there’s only one of me and so frozen party food is a boon, especially when you can choose from a wide range for different dietary requirements. My first Festive get together, with a guest list of 20 so far (!) has some vegan, vegetarian and gluten-free guests arriving. And I want to offer them something spectacular, as stunning as my centre piece glazed and bake ham, or my turkey crown with bacon and maple. So after perusing the Tesco Food website, I found the ideal recipe, Stuffed Roasted Squash with Pesto.
As you can see from the photos above, this recipe for Stuffed Roasted Squash with Pesto looks absolutely amazing. It takes a little while to prepare but I just made a pot of tea and tuned the radio on. Nearer Christmas when I make it again, I’ll treat myself to a glass of prosecco or sherry! To accompany this glamorous vegan roast I served a selection of party food including some Tesco Finest Thai Inspired Rolls, which are also vegan. And for the rest of my guests, I chose some more party food to suit all tastes: Crispy Chilli Prawns, Halloumi Fries and Pizza Dippers And Marinara Sauce. There was plenty of “fizz”on offer, as well some low-alcohol wine for the drivers. Everyone was loved the food and nobody felt left out or hungry.
This fabulously festive recipe has some very tasty ingredients in it. From the butternut squash to spinach, mushrooms, char-roasted peppers to chestnuts and a pecan pesto sauce made with roasted garlic. All of the ingredients came from Tesco of course as well as the party nibbles and fizz! I hope this recipe has inspired you to make it, as I said in the sub-title, by making this vegan centrepiece, however you do Christmas, everyone’s welcome at Tesco; that’s meat eaters, pescatarians, veggies, vegans and anyone with gluten-free or dairy-free requirements. I managed to feed a crowd with ease and minimal fuss, and everyone went home happy, albeit a little tipsy! All that remains for me to say is it’s NEARLY Christmas and I’ll be liberating the mince pies this weekend! Karen
