Eight Months of Thrifty and Organic Meal Plans with Recipes
Welcome to another Thrifty and Organic post, where I will be highlighting all of the recipes that I have created for Organic UK throughout the year as well as announcing some exciting news about a Naturally Different Organic UK Twitter party I will be hosting along with Foodies 100. Over the last eight months I have been developing recipes using only organic ingredients that have been healthy as well as not breaking the bank. I have suggested six core ingredients every month, in line with seasonal availability, and have devised meal plans that are easy to make, tasty to eat and that show that organic food can be incorporate into the weekly meal plan, at no extra cost, or at very little extra cost. There have been salads in jars, barbecued peaches, exotic lamb roasts, comforting chicken dinners and apple tarts on the menu; they have all been extremely cost-effective with all meals coming in at under £3:00 a head, and in some instances, soups and treats have been an incredible 20 to 30 pence a head! I have shared over thirty recipes and nearly eighty leftover recipe ideas…….all of them thrifty and organic! I have created a montage of the recipe and meal plans below, for easy reference, as well as highlighted the TOP THREE recipes from the last eight months.

Thrifty Organic February
The year started with a delicious Roast Chicken dinner for February, with some little Hand Pies and a comforting Bread and Butter Pudding with Rhubarb Compote.

Thrifty Organic March
For March, there was a more exotic menu with Persian Lamb, Spiced Cauliflower and a Chocolate Truffle Cake, as well as a Spicy Shepherd’s Pie with Cheesy Leek Topping.

Thrifty Organic April
Then came April showers and Easter, with a special menu for Whole poached salmon with Herb mayonnaise, Spring Greens with Citrus butter, Minted New Potatoes, Salmon & Vegetable Cheesy Bake, Potted Salmon & Herb Sandwich Spread and Orange Cream Cheese Cake.

Thrifty Organic May
May was all about spicy Beef Curry and a Two Cheese and Asparagus Tart with Seasonal Vegetables, followed by a delightful Gooseberry Fool-cum-Trifle!

Thrifty Organic June
June saw some new recipes for an easy to make Sausage and Fennel Meatball Bake, some delicious Cheese and Spring Onion Scones to accompany some Watercress Soup with Strawberry Jelly to finish!

Thrifty Organic July
When it came to July I decided to break out the barbecue and cook some Lamb and Rosemary Skewers along with some FAB little Salads in Jam Jars! There was also some roasted beetroot and a Raspberry Custard Bake to finish off the menu.

Thrifty Organic August
With Great Britain basking in a fabulously hot summer, August was also about the barbecue! There Hamburgers, Peaches and Mediterranean Vegetables on the menu along with a Quinoa Salad too.

Finally, it was September, and a VERY special menu for #OrganicSeptember, with FIVE new recipes for:

Irish Soda Bread with Oats
Somerset Pork with Apples
Creamed Leek and Cabbage Braise
Rustic Apple Galette

So, it is the HUMBLE sausage that won! Which, is not that surprising as it is a cheap ingredient to buy and is so versatile, as well as being a favourite of children and adults alike.

You’ve just shown how it is to eat properly but economical. We follow these ideas all the time in this house. We eat well but sometimes it may appear a little unusual to some – i.e. the meal is not always meat, potatoes & three vege. We love beans, lentils, chick peas, cous cous, etc so it’s really easy to live well and have healthy meals.
