Pumpkin, Kale and Walnut Galette with Pancetta and Onion Jam
I love receiving hampers of food, and recently a wonderful hamper arrived for me courtesy of Applewood Cheese, filled to the brim with delicious ingredients, as well as some Applewood spreadable cheese. As you may have guessed, I am taking part on a recipe challenge, hence my hamper full of food, and I have to create three recipes using the ingredients in my hamper, as well as Applewood spreadable cheese, as part of my recipe creation challenge…….which, hasn’t been hard given all the amazing fresh ingredients that was in the hamper. The first ingredients I decided to use were the very seasonal vegetables, pumpkin and kale, along with some puff pastry, onion jam, pancetta, walnuts, onions and some Applewood spreadable cheese too. I am a BIG fan of pies, tarts, flans and quiche, so it seemed perfect to create an easy to make “galette” for my fist recipe, and so my recipe for Pumpkin, Kale and Walnut Galette with Pancetta and Onion Jam made it too our family meal table last week.
Galettes are my favourite way to serve pastry, and I have already shared some sweet versions on Lavender and Lovage earlier this year….. Spiced Mirabelle Plum Galette Recipeand Rustic Apple Galette, but savoury galettes are also delicious and are so easy to make, and some of my hamper ingredients were just crying out to be encased on pastry! This galette serves 6 to 8 people and that makes it extremely thrifty, and we enjoyed this as a family twice, once with a simple salad and then as a light supper with some oven chips and grilled tomatoes. It also makes for an excellent picnic or lunch box savoury treat and if you prefer, you can make the galette with shortcrust pastry, which is always better served cold in my opinion, than puff pastry, which is better served hot or warm.
Applewood cheese was first created in 1965 in Ilchester, deep in the heart of Somerset. Surrounded by miles of lush green grass, some of the best cheeses are crafted in this pocket of England, by people who really know a few things about cheese. Wherever possible they use the best quality local ingredients with a great deal coming from Somerset and the surrounding counties, which makes it a very local product indeed. It’s a smoked cheese, and one that my family and I love – in fact we always have some on our Christmas cheeseboard. The new addition to the Applewood cheese stable is Applewood Spreadable…..a spreadable cheese that can be spread (over bread, crackers or vegetable crudites), stirred into various recipes such as soups, pasta and egg dishes and then of course shared, with friends and family alike! If you want to see what the other Applewood Spreadable bloggers have been up to, you can follow our culinary journeys on twitter and Facebook by searching for the hash tag #SpreadStirShare
My first recipe for Pumpkin, Kale and Walnut Galette with Pancetta and Onion Jam is shared below, and look out for my next two recipes, which will follow soon! Have a great Wednesday, half way to the weekend now…..see you soon with more NEW recipes, as well as some long overdue 5:2 diet recipes, Karen
