Bacon Chilli Popcorn
in the Microwave
or a
MultiCooker
Chilli and bacon popcorn? Hello……yes please! This is a combination made in heaven and one that I will be repeating again. This was the recipe I made as a snack one day last week, when the fog was as thick as porridge and the rain teemed down the windows like the Niagara Falls. It’s obviously not for vegetarians or the faint hearted, as it really does pack a red chilli punch and children might find it a wee bit challenging on the spice front, plus it’s loaded with bacon………but, if like me, you are a chilli head and bacon addict, then this is very much the snack of the day for you.
I normally make popcorn in the microwave – it’s dead easy and it cuts back on the mess too, but, as I was sent a REDMOND Multicooker recently, one of their RMC-M4502 models with 34 programmes, I decided to give the appliance a test run with this recipe. You can of course still make this popcorn in a microwave, as well as in a saucepan on top of a conventional hob, but if you are a multicooker owner, or if you fancy buying one of these amazingly versatile machines, then here’s your first recipe…….scroll further down this post.
The Redmond Multicooker is an all-in-one kitchen appliance, which has 34 programmes – 16 automatic and 18 manual programs which enable you to cook meat, fish, poultry and seafood, vegetables, oatmeal, soup, pasta; deep fry, make yogurt and dessert, bake, and more! It’s special 3D heating (on the bottom, sides, and top) allows the heat to conduct evenly, saves minerals and vitamins in the food. There’s a time delay function, which allows you to delay the start of cooking for up to 24 hours, so your meal will be ready for an early breakfast or by the time you come back from work.
This popcorn recipe turned out extremely well and I will defintely make popcorn in the Multicooker again. Other programmes I am keen to try are the bread making programme as well as oatmeal setting for overnight porridge. It’s a pretty nifty machine, as it covers slow cooking, steaming, baking, frying. roasting and many more functions all in one appliance, meaning more space in the kitchen. The idea for today’s recipe came from the Channel Four website here: Fried Chicken with Chilli and Bacon Popcorn Recipe and is my entry this month for Dom”s Random Recipes; this month Dom asked us to search the internet for our recipes, and this was the result from my “popcorn” search.
I have edited and tweaked the recipes to suit my personal requirements, such as adding EXTRA bacon and omitting the Cayenne pepper…….it is a really great recipe for “loaded” popcorn, and I am thinking about serving it as a topping for soup next time, in place of croutons, or sprinkled over the top of a bowl of chilli…..such as my recipe for Bonfire Chilli with Beef, Chocolate and Pumpkin……..
…..I bet it would add a great taste and texture to this recipe, as well as soups, stews and casseroles. If you are interested in what the Multicooker can do, then why not pop over to see the full specifications here: Multicooker REDMOND RMC-M4502 where you can also see some recipe ideas using this appliance. That’s all for today, I’ll be back over the weekend with some more new recipes and travel tales, have a great Friday, Karen

Ingredients
- 100g salted butter (melted)
- 1 fresh red chilli, finely chopped
- 2 teaspoons smoked paprika, pimenton
- 200g smoked lardons
- 2 tablespoon rapeseed oil
- 100g popcorn
Note
A delectable, spicy twist on the usual buttered popcorn, this popcorn packs a punch with its chilli and paprika butter coating whilst the bacon adds a subtle smokiness. Can be made in a conventional microwave as well as a mulitcooker.
Directions
Step 1 | To make the popcorn in a multicooker: fry the bacon lardons intil crisp - set to one side. Add all the ingredients into the bowl of the multicooker, mix well and close the lid and set the cooking cycle for Quick Cook at 160C. Cook for the 10 to 15 minutes or until the popcorn stops popping, then carefully open the multicooker lid. |
Step 2 | Mix the popcorn and then add the fried bacon lardons and mix again. Serve straight away in small individual bowls. |
Step 3 | To make the popcorn in the microwave: Fry the bacon lardons as before and set aside. Place the butter, oils, chilli and paprika into a large (microwaveable) bowl with a lid, and microwave until melted - about 2 minutes. |
Step 4 | Add the popcorn to the spiced butter/oil mix and cook on high for 4 to 5 minutes or until the popcorn stops popping. Add the bacon lardons and mix well before serving like above. |

oh yes PLEASE!!!… what a simple but extremely effective recipe. I love popcorn but rarely have it as a savoury snack but this is really worth doing… thanks SO much for the brilliant entry to random recipes xx
Karen Burns-Booth says
Glad you approve Dom, although I had to do quite a bit of sifting through the category “popcorn” after “googling” it!
Christine Kolinek says
Hello Karen, enjoy your blogs immensely, however I noticed that your BACON chili popcorn was listed in the recipe as being vegetarian!
Karen Burns-Booth says
Ooops! Thanks for alerting me to that, I must have added that category by mistake and I will edit that right now! Karen

Hi Karen, just out of curiosity did the cooker come with a UK plug?

It did come with a UK plug David! Karen
Shirley McMurtrie says
Greetings Karen, I wish to try this in a saucepan…I’m thinking it might be best to heat the butter etc. in a small pan, and stir into the popcorn after it is popped…I’m a little afraid of burning it. What do you think Karen ?
Karen Burns-Booth says
Hello Shirley, here’s how to make it in a saucepan:
Put the vegetable oil in a large, deep pan with a lid.
Add the popcorn and replace the lid.
Cook over medium heat, shaking the pot occasionally, until the popping sound stops after about 5 minutes.
Meanwhile, melt the butter and add the chilli and bacon. Pour this over the popcorn when it is cooked and mix well.
Hope that helps?
Karen
