In just under a week, Taste of London: The Festive Edition will open its doors and I am delighted to tell all my readers that I will be there, demonstrating some recipes I have developed with Great British Chefs and a2Milk. Today’s recipe for Christmas Morning Breakfast Bake is one of the recipes that I will be cooking at the Taste of London show – it uses a2Milk, a 100% natural fresh cows’ milk from specially selected cows, which contains only the A2 protein, and is free from all A1 protein which is the protein that causes problems in those who have problems digesting normal milk.
With Christmas only a few weeks away now, this wonderful breakfast bake is the perfect way to start the day on Christmas morning – crisp bacon, herby sausages, sun-dried tomatoes and baby spinach give this breakfast bake a festive look and taste which is all baked in a lightly spiced egg custard. This can prepared the night before ready for popping into the oven on Christmas morning, thus giving you an easy, tasty and hassle-free celebration breakfast, or brunch, depending on what time you get up! Using a2Milk in this recipe means that this is suitable for those who are slightly lactose intolerant or have problems digesting normal milk.
If you are vegetarian, then please omit the bacon and sausages from this breakfast bake, and add some fried mushrooms and peppers instead, it will be just as tasty and will still be perfect for all those who are have problems digesting normal milk in your family. Serve this breakfast bake cut into squares with fried tomatoes and maybe a glass of fizz on the big day – it’s also a great recipe for any other time of the year, especially when you have a houseful at the weekend maybe. Ingredients
- 2 tablespoons rapeseed oil
- 200g diced smoked streaky bacon, or lardons
- 350g pork and herb sausages, skinned and cut into small pieces
- 1 onion, peeled and diced
- 2 cloves garlic, peeled and finely diced
- 450g baby spinach leaves
- 4 sun-dried tomatoes drained, finely chopped
- Sea salt and black pepper
- 1 teaspoon smoked paprika
- 600mls whole a2Milk
- 9 large free-range eggs, lightly beaten
- 1 large baguette, cut into cubes
Note

Directions
Step 1 | Add the rapeseed oil to a large frying pan and gently sauté the bacon, sausage, onion and garlic for about 5 to 8 minutes until the bacon is crisp and the sausages are cooked; add the spinach and cook until it is wilted, for about 2 minutes. Add the chopped sun-dried tomatoes to the mixture and set aside. |
Step 2 | Mix the milk with the eggs and season to taste with salt, pepper and the smoked paprika. Scatter the baguette cubes over the bottom of a large baking dish, and top with half of the spinach mixture. |
Step 3 | Top with the remaining baguette cubes and spinach mixture and then pour the egg and milk mixture over the top. |
Step 4 | Push the bread down into the egg custard mixture, cover and allow to sit for at least 2 to 3 hours (or overnight) before baking uncovered in a pre-heated oven, 200C/400F/gas 6 for 45 to 50 minutes, until the bake is puffed up and golden brown. |
Step 5 | Allow to cool for 5 minutes before serving. |

I have the usual porridge with cinnamon! I stick to normal breakfast and lunch and then we have curry for our main Christmas meal in the evening. If I had a special breakfast and lunch I’d never find the room for the main meal later! I’ve learned this from years of laying on the sofa feeling totally uncomfortably stuffed!

I’m not sure the name but you lay bread slices in a baking dish, put ham and cheese over it then pour beaten eggs on it and top with cornflakes.
