Breakfast Ham, Cheese
and Egg Cups with Peppers
Hello from me, and with a frantic and very quick post today, one of many probably as I struggle to juggle cooking and writing lately! Today’s recipe is a bit of a gem and comes from The Mom Chef – Taking on Magazines, who was my assigned partner for a new cooking club I joined recently; similar to the Secret Recipe Club I participate in every month, this is also a monthly cooking club where you are assigned a partner, you then make a recipe from their blog or website and share it on your own site on a designated “reveal day” – I love challenges like this, as even with my busy work load, you get to meet new people and discover new recipes too! Today’s recipe is my adapted version of The Mom Chef’s recipe for Mini Frittatas which she took from All You Magazine, August 2011. I had to adapt it as I forgot to post my recipe on the correct day, which was yesterday and therefore had to work with what I had available…….hence the “Clueless in France” title, and I should have made a soup!
The Mom Chef has a wonderful site, and other recipes that caught my eye were: Cheesy Garlic Blooming Loaf, Buffalo Chicken Drumsticks, Chewy Ginger Cookies and Aunt Lou’s Fresh Apple Cake. The Mom Chef LOVES recipes, she says and has shelves (always plural) dedicated to cookbooks which are read daily. She belongs to newsgroups that just send out newsletters that are loaded with recipes, which are stored in electric files for later perusal. She also has real file folders or card boxes stuffed with recipes that have been cut from magazines, newspapers, food containers or that have been photocopied or handwritten for her. As you can see, she is PRETTY committed to recipes and magazines in general! I am an avid cookbook hoarder collector too, but I had to stop my magazine subscriptions as they were getting way out of hand, although I do buy a sneaky copy now and then and also subscribe to a couple on-line.
Today’s recipe for Breakfast Frittatas has just a couple of substitutes, in place of potatoes I added cheese and in place of bell pepper, I used Peppadew Peppers, as I worked with them last year and have jars and jars of peppers at my disposal! The recipe is a winner and makes a perfect breakfast or brunch dish, as well as being a great idea for school and office lunch-box snacks. Ingredients
- 6 slices of round deli ham
- 6 free-range eggs
- 2 tablespoons whole milk
- 75g grated cheddar cheese
- salt and pepper to taste
- 6 whole Mild Peppadew™ Piquanté Peppers
Note
These fabulous little ham and egg cups are basically gluten free breakfast muffins with a whole Mild Peppadew™ Piquanté Peppers baked with them for piquancy and colour. Easy to make and perfect for lazy weekend breakfasts or festive brunch.
Directions
Step 1 | Pre-heat oven to 200C/400F/gas mark 6 and spray 12 x muffin cups with oil or grease with a little butter. |
Step 2 | Whisk the eggs with the milk, cheese and season to taste with salt and pepper. |
Step 3 | Line each muffin cup with a slice of the ham; divide the egg and cheese mixture between ham cups and then top with a whole peppadew pepper. |
Step 4 | Bake in the pre-heated oven for 20 to 25 minutes until the egg mixture has puffed up and is light and fluffy and golden brown. |
Step 5 | Ease them out of the muffin tray gently with a butter knife and serve 2 per person for breakfast or brunch. |

Love your ham and cheese cups! Using the Peppadew peppers was perfect for me as I am not a big fan of green bell peppers. I agree with the other ladies, they are perfect for brunch!
