with Emma Bridgewater and Market Deli
The Six Nations Rugby championship is over for 2016, and as avid England supporter, I’m delighted to say that England won the Grand Slam as well as the overall Six Nations Championship! Yesterday was billed as “Super Saturday” when ALL the final fixtures were played, and what better accompaniment to this wall-to-wall rugby viewing day can there be than wine, chips and dip. I whipped up today’s recipe for Bacon, Cheddar and Chive Cream Cheese Dip in FIVE minutes, served it in some beautiful Emma Bridgewater bowls along with a selection of Market Deli chips and crisps. Market Deli has partnered with Emma, who is a renowned British pottery maker, to create this special range of collectible serving bowls; perfect for serving Market Deli’s sharing bags which are ideal for social occasions, which a day of rugby was!
As part of a collaborative post with Market Deli and Emma Bridgewater, I was asked to create a new recipe for a dip, that would be the perfect accompaniment to their exciting and tasty range. Enter my recipe for Bacon, Cheddar and Chive Cream Cheese Dip, a decadent and very creamy dip made with English Cheddar cheese, Yorkshire cream cheese, smoked British bacon and freshly cut herbs from my garden, the perfect recipe to echo the delicious, premium snacks that Market Deli offers in a mouth-watering range of potato and pita chips, made and seasoned with the finest authentic ingredients and produce found in delicatessens across Europe and UK. Ingredients
- 300g cream cheese
- 100g grated mature Cheddar cheese
- 2 tablespoons crème fraiche or sour cream
- 1 teaspoon garlic granules
- 4 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh parsley
- salt and pepper to taste
- 8 rashers of smoked back bacon (grilled and then crumbled)
Note
A fabulously creamy and indulgent recipe for Bacon, Cheddar and Chive Cream Cheese Dip - serve this dip with crisps, pita chips or crudités.
Directions
Step 1 | Put the cream cheese, grated cheddar, crème fraiche or sour cream into a bowl and add the garlic granules, herbs and seasoning, mix well. |
Step 2 | Meanwhile, grill the bacon rashers until crispy, allow to cool slightly, then crumble or snip the bacon into small pieces. |
Step 3 | Add 3/4 of the bacon to the cream cheese dip mixture and stir it through to blend it. Put the dip into the fridge for 30 minutes, to firm up, then spoon the dip into two dishes and sprinkle the remaining bacon over the top. Garnish with a little extra fresh parsley and serve with crisps, chips or crudités. |
Step 4 | You can make the dip the night before you intend to serve it. Store in the fridge in a covered container. |

My recipe for a gorgeous dip is – 4 parts Quark cheese vigorously mixed with 1 part Roquefort, finely chopped red grapes for sweetness, and shredded spring onion for bite. Serve these with any of the Market Deli range for a great sweet & savoury snack.

INGREDIENTS:
1 bag (56 oz.) Broccoli Florets
24 oz. Mayonnaise (3 c.)
24 oz. Sour Cream (3 c.)
24 oz. Blue Cheese, crumbled, divided
1 lb. Bacon, crisp-cooked, crumbled
10 oz. Butter Flavored Crackers, crushed, divided

My favorite dip recipe is guacamole! I cut up a ripe avocado and mash it with diced garlic, red onion, tomato, lime juice, and fresh cilantro. It’s always so good!

I love a Roasted cherry tomato and goat cheese dip!
3 tbsp olive oil, divided
1⁄2 lb cherry tomatoes
1 cup whole milk ricotta cheese
1 medium clove garlic, minced
1⁄4 cup minced fresh flat-leaf parsley
1⁄4 tsp salt
Zest of 1 lemon
1⁄2 tsp freshly squeezed lemon juice
1 log goat cheese, pinched into large chunks

It would have to be my warm artichoke and Parmesan dip, perfect with those sweet chilli deli pitas
Preheat the oven to 220 C
Blend together 1 can of artichoke hearts ( in water and drained) with 115 grams of grated Parmesan and 115 grams of full fat mayonnaise until smooth. Transfer to an oven proof dish and bake for 15 minutes until golden brown on top. Serve immediately alongside tasty crudités, crackers and flatbreads.

Garlic cloves, Tinned plum tomatoes, virgin olive oil and pepper.
Brown the garlic in a pan then add the tomatoes simmer for twenty minutes, stirring ocassionally. then leave to cool and put in a dipping bowl and serve.

In a food processor, puree the chickpeas and garlic with the olive oil, lemon juice, tahini (if using), cumin, and ¾ teaspoon salt until smooth and creamy. Add 1 to 2 tablespoons water as necessary to achieve the desired consistency.

200g smoked salmon
Freshly ground pepper
Squeeze of lemon juice
Horseradish to your taste optional or dill,
Blitz cheese and salmon till smooth or slightly lumpy to taste

150ml good quality mayonnaise
50g harissa (or to taste)
1 tsp lime juice
1 tsp honey

Blitz everything except the olives in a food processor and then add the olives

I love sour cream sprinkled with chives. It’s ready in seconds
I love this homemade aubergine and tahini dip- Morrocan inspired
4 large aubergines
8 tsp tahini paste
2 garlic cloves, crushed
8 tsp lime juice
1 tsp ground cumin
2 tsp sesame oil
2 tbsp olive oil
salt & pepper to taste
Preheat the oven to 230C, gas mark 8. Prick the aubergines all over and place on a baking sheet in the oven for about 30 minutes, until very soft.
Remove and cut the stems off, leave to cool. Split in half and remove all the flesh, discarding the skins.
Put all the ingredients, except the olive oil, into a food processor and whiz to a smooth puree.
Spoon into a pretty serving dish and chill until needed.
Just before serving, drizzle the olive oil over the dip.
Blue Cheese and Sour Cream with a splash of Tobasco sauce. It’s so moorish. Great for adding as a side for a steak dish too.

I make my own dip with taramasalata, chopped spring onions and chillies with lemon juice
This is yummy:
Butternut & harissa houmous
½ butternut squash (about 400g), peeled and cut into 2cm pieces
3 garlic cloves
2 tbsp olive oil
3 tbsp tahini paste
1 tbsp harissa
, plus a little extra for drizzling
400g can chickpea, drained and rinsed
Method
Heat oven to 200C/180C fan/gas 6.
Put the butternut squash and garlic cloves in a roasting tin, season well and add 100ml water.
Cover the tin with foil and bake for 45 mins, until the squash is really tender. Leave to cool.
Tip the squash into a food processor with any juices from the tin.
Add the garlic cloves, Add the remaining ingredients, season with salt and blend to a paste.
Scrape the houmous into a bowl. Drizzle with extra harissa before serving.
300g fresh, ripe tomatoes, diced
250g mango, diced
1/2 small onion, diced
Pinch of caster sugar (if required, you can leave it out)
Handful of chopped fresh coriander
2 tablespoons fresh lime juice
1 tablespoon cider vinegar
Pinch of salt
Pinch of black pepper
1 clove garlic, minced
Stir all the ingredients together, and serve. Can be stored in the fridge hours before being needed too. Serve with pitta bread, tortilla chips or pitta chips.
I also love this in a wrap with peri-peri chicken, atop a grilled beef burger, or with a salad.

I love beetroot hummous – just roast some beetroot and blitz it with your favourite hummous recipe. Or use roasted red peppers instead of the beetroot.

250g vacuum-packed beetroot
½ tsp ground cumin
2 tsp chopped mint
, plus a few leaves for sprinkling
squeeze lemon juice
3 tbsp half-fat crème fraîche
a few pinches nigella seeds
Put beetroot and cumin in the small bowl of a food processor, season and blend until smooth. Tip into a bowl, add the mint and lemon juice, then gently stir through crème fraîche to get a rippled effect. Sprinkle with mint leaves and nigella seeds.
Sour cream, black pepper and chives. Mmmmm.

juice from half lime [or to taste], rock salt, garlic and coriander and chili flakes mashed in a mortar and pestle
add to 3-4 avocados that have been processed in a food processer Or roughly chopped and left hole
Add crumbled bacon bits [or u can roast lardons]
mix together
Serve with flat bread or baked potato [if being used with the baked potato – you may add mayo to the mix)
Caramelise some red onions first then mix together with some soft cream cheese, sour cream, chives, salt and pepper
My favourite is Mango dip..I use: mango, avocado,cherry tomatoes, red onion ,1/2 jalapeno pepper and a tiny amount of lemon juice…it’s delicious!!

I make a Kidney Bean dip, it can also be made with black eyed peas and well probably with any bean. Fry spring onions and garlic and red fresh chillis until soft, add fresh tomatoes and kidney beans and warm through. Then puree all the ingredients. It is lovely with chips. I reckon the Market Deli Cheddar, Chorizo, Sweet Chilli or the Red Pepper would go well.

My 9 year old makes THE BEST hummus.
A drainer tin of chickpeas, clove of garlic (or two if you like) tbs of tahini, slug of olive oil, and a little water to loosen. Whizz it all up.
Add lemon juice and black pepper to taste. We sometimes add cumin too.

Your dip sounds delicious. My favourite dip recipe is a cannellini and red pepper dip:
400g tin of cannelini beans (drained)
Small jar of roasted peppers (drained)
85g softened cream cheese
1 clove garlic, minced
Juice from half a lemon
Salt and pepper to taste
Puree everything in a food processor until smooth!
For a healthier dip I use Skyr (creamy & fat free) blended with whatever flat leaf herbs I have available, garlic and either olives or anchovies. Just yummy 🙂

There are many dips I enjoy. But, usually, I just go for a nice soured cream and chive dip. It’s so quick, delicious and works with a wide variety of foods. I use the following recipe:
Ingredients:
5 tablespoons sour cream

1 pinch salt

Mix it all up… That’s it.

I sometimes make a simple lunchtime dip for children out of a tin of tuna mashed into some low fat sour cream, seasoned with pepper and a squirt of lemon juice. It is particularly good with crisp carrot sticks, celery, cauliflower, broccoli and red pepper strips.

I love making guacamole. Mash an avocado with a teaspoon each of lemon and lime juice, half a diced red onion, one chopped up tomato and a small handful of parsley. Delicious!

Caramelised Onion Dip
INGREDIENTS
2 tablespoons unsalted butter
2 medium onions, thinly sliced
salt and black pepper
1 8-ounce bar cream cheese, at room temperature
1 cup sour cream
2 tablespoons chopped fresh chives
thick-cut potato and vegetable chips, for serving
DIRECTIONS
Melt the butter in a large skillet over medium-low heat. Add the onions and ½ teaspoon salt and cook, stirring occasionally, until deep golden brown, 30 to 35 minutes. Remove from heat and let cool.
In a medium bowl, mix together the onions, cream cheese, sour cream, chives, ¼ teaspoon salt, and ⅛ teaspoon pepper. Serve with the chips.
I am rubbish in the kitchen, so do simple things like cream cheese with some chopped chives
Spinach and Artichoke dip is always a winner in our house. Chopped artichoke hearts, spinach, onions, garlic all mixed together with parmesan and sour cream, salt and pepper. Can be served cold or warmed under the grill with some mozzarella sprinkled over the top to make it lovely and gooey! Sometimes we add a little paprika or cayenne to give a little boost!

Mine is super quick and simple… You tip a tub of soft cheese, ( I usually use Philidelphia) pour over Sweet chilli Sauce and add some chopped corriander.. really lovely and super quick and easy!

I love making my own salsa, I don’t use measurements though!
I finely chop up a red onion, some cherry tomatoes, garlic, a chilli and some mango and fry it all off with a little agave nectar and chilli paste. It’s delicious!

Feta and Pepper dip, learned from a Greek friend. Roast red peppers till nicely charred, then blitz with some olive oil, a chunk of feta and a bit of garlic. An absolute winner, I promise you!

I’d make an Articoke dip. I tried a dip like this in Canada and it’s addictive!
In food processor, purée artichoke hearts, cheese, sour cream, oil, mustard and pepper until well combined. Add some basil to finish. It works!

My favourite is 5 min Hummus 1 15-ounce can chickpeas, rinsed
1 clove garlic,1⁄4 cup olive oil, plus more for serving,2 tbs fresh lemon juice,1 tsp ground cumin, salt and 1/4 tsp paprika whizz them all up together drizzle with olive oil a sprinkle of paprika

A Three Onion Dip with anchovies, mushrooms, and Worcestershire sauce
Scotch bonnet houmous is my current favourite dip. Not as hot as I feared and a lovely flavour. Much nicer than ordinary houmous. Just usual houmous recipe with the addition of scotch bonnets!

2 x 400g cans of chickpeas
4 tsp tahini
2 garlic cloves, crushed
1 tsp crushed sea salt
6 tbsp quality extra virgin olive oil

Gluten free chili cheese dip – make a rue using gluten free flour and butter, add cheddar cheese and stir constantly until melted. Add in 2 teaspoons of very lazy chilis and enjoy 🙂

one of my favourites is a nacho cheese dip. I heat up cheese and cheese spread until it all melts together, then add some sour cream, jalapeños and cumin. I do love a sour cream and bacon dip as well though

When on slimming world, this is my very low syn blue cheese dip which is very simple. Using quark, get a small amount of stilton which you crumble into the pot of quark, give it a mix and leave in the fridge overnight and you’ll magically have a pot of low Syn dip!

Guacamole dip
2 avocados – peeled, stones removed and chopped
1 small red onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
Mash avocados in a bowl. Stir in onion, garlic, tomato and lime juice. Season with salt and pepper to taste.
