Italian Sub Sandwich with Prosciutto di Parma, Salad, and Cheese - An easy to prepare "long sandwich" that would be great for outdoor dining and picnics.
Ingredients
- 1 small hot-dog or submarine roll, per person (about 5"/12.5cm long)
- Drizzle of extra virgin olive oil
- Dried oregano
- Fresh lettuce leaves (of your choice)
- 1 small vine-ripened tomato per person (thinly sliced)
- 1/4 red onion, per person (very thinly sliced)
- 25g Parmigiano-Reggiano cheese per person (shaved into thin slices with a vegetable peeler)
- 2 slices of Prosciutto di Parma per person
- Sea salt and ground black pepper, to taste

Directions
Step 1 | Cut the submarine or hot-dog rolls in half through the middle, keeping both halves attached on one side; then drizzle some of the olive oil over both sides. Sprinkle the dried oregano over both sides. |
Step 2 | Start to layer the sandwich like so: on one side of the roll arrange the lettuce leaves, sliced tomatoes seasoned with salt and pepper, red onion slices, Parmigiano-Reggiano cheese and finally arrange the two slices of Prosciutto di Parma ham over the top. Cover the filling with the top half of the roll to make a sandwich. |
Step 3 | Eat immediately, or wrap in grease proof paper secured with string for transporting to a picnic. |
Step 4 | Can be made up to 2 to 3 hours in advance for ease. Wrap the sandwiches and keep in a cool place or in the fridge. |
