A No-Cook Easy Dessert
Everyone loves an easy to make and preferably a no cook dessert during the summer months or when time is tight, and my recipe today for Mini Oreo Cheesecake and Strawberry Parfait Pots is a winning recipe! Individual pots are always a lovely way to serve dessert, as everyone feels they have their “own” special pudding and they look good too. Oreo biscuits are well-known in the UK now, and with their classic original range comes two new kids on the block – Limited Edition Oreo Strawberry Cheesecake flavour and Oreo Mint flavour.
Being a lover of strawberries and cream as well as cheesecake, when I was asked to create a simple but delicious dessert recipe by Oreo and Great British Chefs, my attention turned to their new limited edition strawberry cheesecake flavour biscuits; the strawberry cheesecake filling in the new biscuits is reminiscent of a creamy strawberry milkshake, and with that taste playing on my taste buds, I came up with today’s recipe idea for the Mini Oreo Cheesecake and Strawberry Parfait Pots.
This delectable “no-bake” dessert in a jar is easy to make; strawberry cheesecake Oreo biscuits are crumbled into small jars or glass pots, with a light creamy cheesecake type mousse which is topped with whipped cream and a cheeky little Oreo biscuit. These can be covered and taken on picnics, as well as being the perfect outdoor summery dessert for a BBQ party or family get together. This recipe has been made lower in fat and calories by using low-fat cream cheese and a small quantity of icing sugar and jam for a much lighter summer dessert.
The recipe for my latest simple dessert creation is shared below, and don’t forget that a serving of this recipe should be seen as a treat – best enjoyed occasionally as part of a balanced diet. Mini Oreo Cheesecake and Strawberry Parfait Pots
(Serves 4)
Ingredients:
8 x Strawberry cheesecake Oreo biscuits
50ml double cream
150g light cream cheese
2 tablespoons icing sugar
4 teaspoons strawberry jam
250g fresh strawberries, hulled and sliced, leaving 4 whole for decoration
100ml whipping cream
Method:
- Blitz 4 biscuits to crumbs in a food processor, leaving 4 biscuits for decoration.
- Take 4 x jam jars or water glasses and sprinkle the crushed biscuit crumbs into the bottom of the jars/glasses.
- Whisk the double cream, cream cheese and icing sugar together until light and fluffy; swirl the strawberry jam through the mixture and spoon it over the crushed biscuits. Layer the pots with the cream mixture and sliced strawberries.
- Whisk the whipped cream until it holds light peaks and spoon over the strawberries and cheesecake mixture.
- Add a whole Oreo biscuit and a strawberry and serve immediately.
So wanted to make these for pud tomorrow but neither Waitrose nor Sainsbury are stocking the strawberry Oreos. Where to buy them??
